Crunchy Chickpea Bowl with lemon garlic tahini 🍚 vegan lunch and dinner recipe, healthy meals
30min · 2 servings Ingredients • Cooked jasmine rice • Brocolli • Can of chickpeas • Salt/pepper • Cooking spray • Chili powder • Garlic powder Lemon Garlic Tahini Dressing: • 2 tbsp tahini • 1 tbsp lemon juice • 1 clove fresh garlic • 1 tsp honey • Water (as needed) Preheat oven to 450. Prepare chickpeas: rinse and drain. Spray with cooking oil. Toss with salt, pepper, garlic powder and chili powder. Bake in oven until crispy: 15-20 min. Toss halfway through. Sauté broccoli in olive oil over medium heat and season with salt/pepper. Prepare tahini dressing: combine all ingredients and blend. Add water as needed for consistency.
