This was a really beautiful little story. I hope that you do rally and feel the urge to revisit and clean it up. I would be incredibly interested in reading that final ending.

Not sure how feasible it would be, but adding in the ability to save even during the conversations would be a pretty big QoL improvement.
Also - if you're able to add in the option to save before the demo spits you out - that could be nice too. (Unless you see enough changing in the first few days that a save wouldn't be necessary.)
