PUMPKIN PIE CROISSANTS 
3/4 cup pumpkin purée
1/2 cup brown sugar
1 cup almond flour
1 tsp vanilla extract
1 tsp pumpkin spice mix
Pinch salt
1/2 cup chopped pecans, reserve 2 Tbsp for garnish

GLAZE
1 1/2 icing sugar
3-4 Tbsp milk
1/2 tsp pumpkin spice mix
1/2 tsp vanilla extract

1. Preheat oven to 350F (convection) or 375F. Line baking sheet with parchment paper. Slice croissants open lengthwise. 
2. In a bowl, combine pumpkin purée, brown sugar, almond flour, vanilla, salt and pumpkin spice mix. You’ll want a spreadable consistency.
3. Fill croissants with 3-4 Tbsp of pumpkin mixture, sprinkle 1 Tbsp chopped pecans and close croissants. Bake for 12-15 minutes until golden brown.
