The Truth About Resting Meat

Cut a steak straight from the pan and you will watch the juices run onto the board. Let it rest and they settle back through the meat.
The rule of thumb is roughly half the cooking time, loosely tented with foil.
Resting also lets carryover heat finish the job, so pull it a few degrees early and land exactly where you meant to.
