Leek and Soy Umami Sauce Ingredients Leek 130g Extravirgin Olive Oil 30g Water 150g Soy Sauce 35g Fresh cream 100g  Cut the leeks in half, then cut them finely again. Heat the extra virgin olive oil. Fry leeks for a couple minutes, then add the water and let it cook until reduced by half. Only then, add the soy sauce and fresh cream. Let them cook for another 10 min. Blend it and pass the sauce through a sieve. Complete the sauce with your favorite herb oil and use it to season your dishes.
