Those griddled pancakes typically include cabbage, eggs, yam, flour and can include different proteins like pork belly and shrimp. My version utilizes thinly sliced cabbage, eggs and the inclusion of panko bread crumbs for some crunch. Fried up in a skillet these are a great snack but can also be made larger for a full meal. Ingredients 2.5 oz thinly sliced cabbage (I used precut angel hair coleslaw cabbage) 1-2 tbsp extra virgin olive oil 2 eggs 2 tbsp panko breadcrumbs 2 stalks green onions sliced (whites and greens separated) Salt and pepper to taste Kewpie mayo @ponofoodsco furikake (check the link in my bio) Sauce 2 tbsp ketchup 1 tbsp oyster sauce 1-2 tsp Worcestershire sauce 1 tbsp sugar 1. In a bowl whisk together cabbage, eggs, and whites of green onions with a fork. Press into cabbage and egg mixture to release liquid from cabbage. Mix thoroughly and season with salt and pepper. 2. In a skillet heat oil over medium heat. Add cabbage and egg mixture and press down and shape your omelette. Let cook on one side for 3-4 minutes and flip and cook for another 3 minutes. Transfer to a plate. 3. Mix together sauce ingredients and drizzle over omelette. Drizzle with mayo and garnish with furikake and rest of green onions.
