Breakfast Pie


Occasionally when my husband and I both have the day off, we enjoy making something a little more special than the ordinary breakfast fare.
Today we made this delicious breakfast pie. This is a recipe I've had for years but don't make very often, so we never get tired of it. I change up some of the ingredients to whatever I happen to have on hand.
 Today I had a little bit of bacon to use up but not enough, so I added some ham as well.

First, press thawed shredded potatoes into the bottom and up the sides of an ungreased 9 inch pie plate. Drizzle with butter.

Bake at 400 for 25 minutes.

In the meantime combine your meat, cheese, onion and bell pepper in a bowl....



and in another bowl combine beaten eggs, milk, salt and pepper.

After your potatoe shell is baked, let cool for 10 minutes.....

then spoon your meat and cheese mixture into the shell.  Pour the egg and milk mixture over the top.
Bake at 350 25-30 minutes or eggs have set.

Let it cool 10 minutes before serving.

Breakfast Pie
3 cups frozen shredded potatoes
1/4 cup melted butter
1 cup diced meat... bacon/ham/sausage
1 cup shredded cheddar cheese
1/4 cup finely chopped bell pepper
1 Tbsp finely chopped onion
2 large eggs beaten
1/2 cup milk
1/2 teas salt
1/4 teas pepper
Thaw potatoes on paper towels to absorb excess moisture.
 Press potatoes into bottom and up sides of ungreased 9 inch pie plate.
Drizzle with butter.
Bake 25 minutes at 400 degrees or lightly browned. Cool 10 minutes.
Combine meat, cheese, peppers and onions. Spoon into the baked potatoe shell.
Combine beaten eggs,milk, salt and pepper. Stir well and pour over meat and cheese mixture.
Bake at 350 degrees 25-30 minutes or until set.
Let stand for 10 minutes before serving.
You can assemble this the night before, omitting the egg mixture and refrigerate.
 In the morning let set at room temperature for 30 minutes. Pour egg mixture over, then bake like normal.

Rebecca's Bistro


Rebecca's Bistro in Walnut Creek Ohio is a wonderful place to gather with friends or relatives in this case. Well... they are my friends too. I have been meeting with this group once a month (excluding the summer months) for about 30 years! Now that's dedication!! One is missing in this photo.


This used to be a log cabin built in the 1800's and restored to a cozy, quaint restaurant about 9 years ago.

This has always been a favorite place for us to meet and the food is fantastic. The menu varies from day to day with delicious salads, soups and sandwiches.






I just love the rustic decor of this place and it has such a warm, cozy and homey atmosphere.

I could sit here with a book and a cup of coffee all day and... 

I would probably have to have one of these pastries. Only one word needed. YUM!

The outside is decorated for the season.


There's something in every nook and cranny.

I hope you all have the chance to visit this place sometime. I know you will love it.

A Morning Tea and Brunch

An Amish lady in my area puts on these delightful tea and brunches. Over a year ago a co-worker asked if I would like to go to one. Of course I would.  She is pretty much booked ahead a whole year but it was worth the long wait. Not only was the food awesome her gardens were just beautiful!!

Is this not the coolest arbor you have ever seen? I want one!! Our teacups were on the table in here. You picked out a cup then went and poured your tea from the teapot on the stone table shown below.

These pastel colored chair are just adorable.
 I never thought about taking pictures of the food. The next time I will.  Everything was so delicious and she kept bringing more and more. I am quessing there were at least 15 or more different dishes and of course I had to try them all!









When a tree is in the way just go around it.








A stone pathway winds through a shade garden. Love shade gardens!


A  place to relax and meditate.





I don't think I have ever seen this tree. She said it is a Tamarix tree. So pretty.








I want one of these too.
