" ~Confucius ~ A simple life (and complex name) Hybrid Tuberous Begonia French name : Bégonia tubéreux Latin name (genus) : Begonia hybrides Tuberhybrida Botanical family : Begoniaceae SWORDFISH STEAK with MANGO SALSA ~ simply easy and 'd ivine' _______ 4 6-8 oz. swordfish steaks (or tuna) 2 Tbsp. extra-virgin olive oil coarse salt & freshly ground pepper to taste 2 ripe mango, peeled and cut into chunks 1 bunch chopped green onions 6 Tbsp. chopped fresh cilantro juice and zest of 1 fresh lemon or lime 1 tsp. red pepper flakes Preheat grill. Brush swordfish or tuna steaks with olive oil and salt & pepper. Combine mango, green onions, cilantro, fresh lemon or lime, and pepper flakes. Let stand at room temperature at least 10 minutes while prepping dinner. Grill 3-4 minutes per side depending on thickness. FRIDAY NIGHT FISH FEAST ~ GRILLED TUNA TOPPED with AVOCADO SALSA

GARDENING NOTE: Celanine poppy ( Stylophorum diphyllum ) and Virginia Bluebells ( Mertenisa virginica ) are two lovely companion plants for naturalizing in the early wildflower garden. Since plants go dormant, both are a perfect choice for a hosta garden. GRILLED TUNA with AVOCADO SALSA ~ two delicious complimentary flavors * 4 (6-oz) 1/4-inch thick tuna steaks pinch sea salt & freshly cracked pepper 2 Tbsp. lime juice & zest for fish juice of 1 lime & zest for salsa 1 cup chopped and seeded Roma tomato 3 Tbsp. chopped fresh cilantro 1 pitted and diced avocado 1 seeded and chopped jalapeno pepper fresh chopped cilantro for garnish Sprinkle fish with salt, pepper, lime juice & zest. Combine remaining ingredients for salsa. Grill fish over hot coals about 7 minutes or until desired degree of doneness . Serve topped with salsa, chopped cilantro, and a pitcher of margaritas.

MACADAMIA NUT CRUSTED FILLET of RED SNAPPER (with Papaya Salsa) ~ from Maison & Jardin ( Altamonte Springs, Florida) "Very easy, very elegant. This is one of our favorite methods of preparing snapper." 6 6-oz. red snapper fillets , American preferred 2 cups fresh white bread crumbs 1/2 cup Macadamia nuts, chopped medium fine 2 tsp. melted butter 1/3 cup good quality mayonnaise pinches of salt & pepper 1/3 cup melted butter 1 Tbsp. water Mix together bread crumbs, Macadamia nuts and melted butter to form crust mixture. Spread mayonnaise on top of fish fillets . Top with crust mixture and season with salt & pepper. Mix water with melted butter and baste the crust. Bake for approximately 20 minutes at 400 degrees. IF YOU CAN'T GET YOUR FILL of CRANBERRIES THROUGHOUT the HOLIDAY SEASON ~ TRY THESE TASTY APPETIZERS ~ while sipping CRANBERRY MARGARITAS (compliments of Rachael Ray - 30 Minute Meals ) 1 1/4 cup cranberry juice 1/2 cup sugar 1 1/2 cup fresh cranberries 3/4 cup fresh squeezed lime juice 3/4 cup tequila 1/2 cup Grand Marnier ice Mix all ingredients, except ice. Pour half in blender and fill the rest of blender with ice. Blend. Repeat with second batch.
