This eggplant pickle (or brinjal pickle as we would call it in India) is made by mixing fried pieces eggplant in a mix of oil, mustard powder, fenugreek powder, tamarind and salt. Called Vankaya Nilava Pachadi in Andhra Pradesh and Telangana, it stays fresh for a year or more and is a great way to preserve vegetables.
