Here's a simple and delicious pancake recipe for fluffy, homemade pancakes:

### Ingredients:

- 1 cup (125g) all-purpose flour

- 2 tablespoons granulated sugar

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt

- 3/4 cup (180ml) milk

- 1 large egg

- 2 tablespoons unsalted butter, melted (plus more for cooking)

- 1 teaspoon vanilla extract (optional)

### Instructions:

1. **Mix the Dry Ingredients**: In a large bowl, whisk together the flour, sugar, baking
powder, baking soda, and salt.

2. **Mix the Wet Ingredients**: In another bowl, whisk the milk, egg, melted butter, and
vanilla extract (if using) until well combined.

3. **Combine Wet and Dry Ingredients**: Pour the wet ingredients into the dry ingredients
and gently stir until just combined. It's okay if the batter is a bit lumpy; overmixing can make
the pancakes tough.

4. **Heat the Pan**: Heat a non-stick skillet or griddle over medium heat. Lightly grease
with a little butter or oil.
5. **Cook the Pancakes**: Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and
cook for another 1-2 minutes until golden brown.

6. **Serve**: Serve warm with your favorite toppings like butter, syrup, fresh fruit, or
whipped cream.

### Tips:

- For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.

- Use buttermilk instead of regular milk for a richer flavor.

- Add mix-ins like chocolate chips, blueberries, or nuts for variety.

Enjoy your homemade pancakes!
