Update CLAUDE.md and README.md documentation

CLAUDE.md:
- Remove all 4 keybinding tables (Viewer/Cont3xt/Parliament/WISE)
- Keybindings are for end users, not AI context; point to help.rs instead
- Trim Key types section to essential types only
- Update Capture Graphs description (now 1-row horizon charts)
- Architecture section already updated for types/ split

README.md:
- Update stats sub-tabs from 1/2/3 to 1-7 with all 7 sub-tabs listed
- Add Capture Graphs, DB Tasks, DB Shards, DB Recovery features
- Add Users tab to Viewer features
- Add Parliament Settings feature
- Add Cookie jar, Context-sensitive help, Animated loading to Common
- Add DB Tasks and DB Shards keybindings
