Any plan to support the official didcomm demo (demo.didcomm.org)? #700

I did some research with AI and one missing part is coordinate-mediation/3.0 protocol. Since the affinidi mediator has its own recipient registration mechanism, I wonder if supporting the demo is on the roadmap?

I'm currently experimenting with a patch to support this protocol, and might be able to share some findings.
