Good idea, and it's done for the next update! Gyro aiming now also works when you choose Wii U Pro Controller (Input menu or the settings overlay), so you don't need the GamePad screen for it.
Turn it on in F1 → Controls → Gyro…: pick Controller gyro (DualSense, DualShock 4, Switch Pro, Joy-Con, Steam Deck and others), Cemuhook (DS4Windows, BetterJoy, phone apps) or Mouse (for Steam Input's gyro to mouse). It works the same as in GamePad mode: aim the bow, hookshot, boomerang, telescope, Picto Box or grappling hook, or press R3 to look around, and move your controller. The same sensitivity, invert and Turn left/right by settings apply.
The game's own Options → Gyroscope switch still has to be on (it is by default, and you can change it in Pro Controller mode too; ignore its note that it has no effect with a Pro Controller, in this port it does). The game also ignores the gyro while the right stick is pushed.
We tested this with scripted game runs but don't have a gyro controller ourselves, so a quick report on how it feels would be very welcome. It's already on the devel branch if you build from source.
@Swordman14 this is now in v0.2.8: gyro aiming works with the game set to Wii U Pro Controller, using the same settings as GamePad mode (F1 → Controls → Gyro…).
I'm closing this since the feature is released. If it doesn't work or feel right with your controller, please comment here (which controller and platform, and a log started with WWHD_GYRO_LOG=1 if the gyro stops) and we'll reopen it. Thanks for the idea!
