Reduce log size for the model tests

### Description

Logs for model tests are too big due to Infinispan related stacktraces. Verbosity level should be reduced so logs can be rendered in a browser. 
Related to the following issue https://github.com/keycloak/keycloak/issues/10016 and PR https://github.com/keycloak/keycloak/pull/10288.
