A classic of French cuisine, this scallop recipe for Coquilles St. Jacques, is the best! I like to add prawns to the scallops for a more generous filling. The crispy cheese and bread crumb topping is so indulgent and comforting. The addition of the mashed potatoes makes it a complete meal. You can choose to serve it in the scallop shell if yours are big enough but mine were tiny!

3 potatoes, peeled and cubed
2 tbsp butter
2 tbsp cream
2 shallots, finely chopped
