Pancake, thin, flat cake, made of batter and baked on a griddle or fried in a pan. Pancakes,
probably the oldest form of bread, are known in different forms throughout the world. The
relative ease of baking on hot stoves or on a griddle has resulted in a variety of pancakes. Old
English batter was mixed with ale. German and French pancakes, leavened by eggs and much
beating, are baked very thin and served with jam or jelly. The French crêpe suzette is folded or
rolled and heated in a sauce of butter, sugar, citrus juice, and liqueur. Russian blintzes, usually
prepared with buckwheat, are thin, crisp pancakes, and commonly served with caviar and sour
cream or folded over and filled with cream cheese or jam. Mexico has its tortilla, which is often
served folded over a bean or meat filling and topped by tomato sauce. In the United States
pancakes are sometimes called battercakes, griddlecakes, or flapjacks and are usually leavened
with baking powder or baking soda and are served with syrup. A pioneer favorite, still surviving
in some localities, is the buckwheat cake.
OPH/South Florida, Inc. (OPH/SF) was formed in August, 1990, to operate The Original
Pancake House restaurants in South Florida. From 1990 to 1993, OPH/SF expanded from
its two original restaurants to five units. In August, 1993, OPH/SF obtained the franchise
rights to the entire state of Florida and became the largest franchisee of Original Pancake
House Franchising, Inc. The franchisor (OPHF) has and will continually look for
opportunities to expand within its market.
The Original Pancake House is a source of pride for its owners, franchisees and employees
alike. It is also the greatest place for breakfast, according to its loyal patrons who have been
coming for over 40 years since the restaurant concept was first introduced in Portland,
Oregon. Since their 1953 beginnings, the founders and franchisees have strived to make
The Original Pancake House an organization where quality food and friendly service is a
tradition carried through the years in each of the restaurants across the country.
Although each restaurant is different from the next, every Original Pancake House features
a homey dining atmosphere as a backdrop to the finest-tasting, highest-quality pancakes
and related breakfast, lunch and dinner foods. Known for never compromising quality, The
Original Pancake House chain has taken a cautious approach to expansion, focusing
instead on perfecting its over 25 pancake, waffle and crepe recipes, made with a patented
enzyme that creates a lighter pancake. OPH uses the authentic recipes of famous chefs
and “home recipes” handed down from generation to generation, including our world-
famous oven-baked Apple Pancake and Dutch Baby entrees. New customers to an Original
Pancake House restaurant are astonished when they find that these cozy breakfast places
are part of a chain. Occupying a special niche in the mature but steadily growing breakfast
segment, The Original Pancake House stands apart from “cookie cutter” competitors that
sacrifice product quality and ambiance in the name of efficiency and labor savings.
There are literally thousands of pancake restaurants throughout the American countryside,
but only OPH qualifies as the most-imitated restaurant in the business. Each Original
Pancake House strives for excellence in the preparation of every recipe and every
ingredient. All of the franchisees have been highly successful

Pancake House was founded by Milagros Basa, Leticia Zamora, and Carmen Zaragosa, in
1970. These three women introduced pancakes and waffles to the market that are basically
rice-eating customers. The first Pancake House was established near the Magallanes Theater
where people who went to the cinema had a taste of the delectable pancakes and cozy
ambience. The restaurant grew throughout the following years, building company-owned and
franchised outlets nationwide. In 2000 an investor group led by Martin P. Lorenzo acquired the
pancake House chain, including the commissary. More stores were built across the country and
at present, the Pancake House Group also operates other restaurants such as Dencio’s,
Kabisera ni Dencio, Teriyaki Boy, Sizzlin’ Pepper Steak, Singkit, and Le Coeur de France. All
together, these brands command a network of 174 outlets nationwide.
