1 Tea Cakes – Vanilla Cake
       Ingredients:
                  •     1 cup Maida
                  •     50 gms Butter (Amul)
                  •     200 gms Milk Maid
                  •     ½ tsp Baking Soda
                  •     ½ tsp Baking Powder
                  •     a pinch of Salt
                  •     Approx. 2/3 (read as two third) cup Buttermilk
                  •     ½ tsp Vanilla essence
                  •
       Method:
                  •     Pre-heat the oven for 10 mins @ 180 degree C
                  •     Mix all the dry ingredients
                  •     Add the butter and mix until everything is incorporated completely
                  •     Add the milk for consistency (we might not need the above
                        measurement of milk completely)
                  •     Mix well till smooth
                  •     Bake this mixture at 180 degree for 30 mins or until the inserted
                        toothpick comes out clean
          •   Notes:
              In the above recipe as per your taste, 2-3 tbsp of powdered sugar can be
              added.
2 Icing Cakes - Chocolate
       Ingredients
                  •     1/2 cup Maida
                  •     Half of1/3 cup Oil
                  •     100 gms Milk Maid
                  •     1/4 tsp Baking Soda
                  •     1/4 tsp Baking Powder
                  •     1 tbsp Cocoa Powder
                  •     A pinch of Salt (optional)
                  •     Approx. 1/3 cup Buttermilk
       Method:
                  •     Pre heat the oven at 180 degree C
                  •     Mix the wet ingredients except buttermilk first
                  •     Add the dry ingredients to the wet and mix until combined
                  •     Add the required amount of buttermilk while mixing and combine till
                        smooth

                  •     Pour the batter into the greased baking pan and bake the same at
                        180 degree C for about 30 mins or until the inserted toothpick comes
                        out clean
3 Chocolate / Choco-Chips Cake
          •   To the above base, add 2 tbsp of Cocoa Powder for Chocolate cake
          •   To the above base, add 2 tbsp of Cocoa Powder and 2 tbsp of Choco
              chips for choco-chips cake
4 Blue Berry Cake
             To the above base, add ½ tsp of blueberry essence add 1/8 cup
       (2tbsp) of fresh/dried blueberries
5 Pineapple Cake
              To the above base, add ½ tsp of pineapple essence
6 Strawberry Cake
              To the above base, add ½ tsp strawberry essence add 1/8 cup (2tbsp)
       of fresh chopped strawberries
7 Coffee Cake
       In the above base, add 1 tsp of Instant Coffee Powder (more if required)
and 1 tbsp of Cocoa Powder
8 Marble Cake
          •   Divide the above batter in two equal halves. To one of the mixture
              add 1.5 tbsp of cocoa powder and mix well (add liquid portion if
              required to achieve the right consistency). To the other mixture add
              1/4th tsp of vanilla essence
          •   Now in the greased tin, alternate a spoonful of vanilla cake batter
              and chocolate cake batter and slightly move around the fork to give
              the marble effect

9 Brownies
       Ingredients
                  •     1 cup Dark Chocolate - chopped
                  •     60gms Butter
                  •     1/2 cup Caster Sugar
                  •     ¾ cup Maida
                  •     1 tsp Baking Powder
                  •     2 tbsp Cocoa Powder
                  •     1/2 cup hung curd (thick curd)
                  •     ½ cup crushed walnut
       Method:
                  •     Grease the baking pan with little oil/butter and dust with
                        maida. If you have parchment paper, grease the tin with oil
                        and place the parchment paper as lining
                  •     Melt the chocolate in butter using double boiler method or
                        microwave. Let this cool for 5 mins
                  •     Add the caster sugar and mix it so that the sugar dissolves
                  •     Add the hung curd now and mix well
                  •     Now mix all the other ingredients together and pour in the
                        greased tin and spread it evenly using a spatula
                  •     Sprinkle the chopped walnuts on top for the additional crunch
                  •     Bake this for 30-40 mins at 180-degree C
                  •     PS: Add 1-1.5 tsp coffee powder mixed in hot water to the
                        above mixture if required
10 Cupcakes
              Ingredients
                 • ¾ cup curd
                 • ¼ cup oil, unflavoured
                 • 1 tsp vanilla extract / essence
                 • 1¼ cup Maida
                 • ½ cup powdered sugar
                 • 1 tsp baking powder
                 • ½ tsp baking soda
                 • A pinch of salt
                 • ¼ cup water
                 • ¼ cup chocolate chip
              Method
                 • In a large mixing bowl take ¾ cup of curd and ¼ cup of oil.

                  •     Add vanilla extract and whisk well.
                  •     Furthermore whisk 5 minutes till the curd and oil blends
                        smooth.
                  •     Then sieve maida, powdered sugar, baking powder, baking
                        soda and a pinch of salt.
                  •     Whisk and combine.
                  •     Add ¼ cup of water and make a smooth batter.
                  •     Add chocolate chip and fold gently.
                  •     Pour the batter in the cupcake liners only till half
                  •     Bake these at 180 degree C for about 20mins or until the
                        toothpick comes out clean
11 Muffins
       a. Walnut Muffins
                  o     Whole Wheat Flour – 1 cup
                  o     Brown Sugar – ½ cup
                  o     Oil – ½ cup
                  o     Yogurt – ½ cup
                  o     Water – ¼ cup
                  o     Walnuts – ¼ Cup
                  o     Chocochips – ¼ cup
                  o     Vanilla Essence – ½ tsp
                  o     Baking Powder - ½ tsp
                  o     Baking Soda – ½ tsp
                  o     Corn Flour – 1 tsp
                  o     Vinegar – 1 tsp
       b. Chocolate Banana Muffins
                  o     Whole Wheat Flour – 1 ¼ cup
                  o     Banana (long variety) – 2
                  o     Cocoa Powder – 2tbsp
                  o     Sugar – ¾ cup
                  o     Oil – 1/3 Cup
                  o     Water – 1/3 cup + 1tbsp
                  o     Baking Soda – 1tsp
                  o     Vinegar – 1tsp
                  o     Pinch of salt
                  o     Choco chips – 1/3 cup

12 Black Forest Cake
          •   Cut the cake into two halves horizontally
          •   Sugar syrup -- Add 4 tbsp of powder sugar in ½ cup of water
          •   Keep one half of cake aside
          •   On the lower half put some sugar syrup
          •   Apply a good layer of whipped cream
          •   Put some tinned cherries on top of the whipped cream layer (You can
              add chocolate shavings as well)
          •   Now again apply thick layer of whipped cream
          •   Now on the other half of the cake put some sugar syrup
          •   Cover the other half of the cake
          •   Apply a thick layer of whipped cream and give the shape
          •   Decorate with the chocolate shavings and pipe the whipped cream as
              required
          •   Decorate it with tinned cherry fruit
          •   Keep it in fridge for 2-3 hours and serve
13 Pineapple Pastry
          •   Cut the cake into two halves horizontally
          •   Sugar syrup -- Add 4 tbsp of powder sugar in ½ cup of water
          •   Keep one half of cake aside
          •   On the lower half put some sugar syrup
          •   Apply a good layer of whipped cream
          •   Put some small cut pieces of tinned pineapple
          •   Now again apply thick layer of whipped cream
          •   Now on the other half of the cake put some sugar syrup
          •   Cover the other half of the cake
          •   Apply a thick layer of whipped cream and give the shape
          •   Take 2-3 tbsp of transparent gel (Neutral Glaze) add 1 tsp of water
          •   Add little yellow color
          •   Apply the gel on the cake
          •   Decorate it with fresh fruits
          •   Keep it in fridge for 2-3 hours and serve

14 Chocolate Ganache
                • 200gms dark chocolate
                • 100gms Amul Fresh Cream
                • Measure Amul fresh cream in a microwave proof bowl and heat it
                  for just 15-20 seconds or till you see the bubbles on the edges
                • Add the grated or chopped chocolate into the fresh cream and
                  cover it with a lid for 2 mins
                • Fold this mixture so that chocolate melts in the cream, if you see
                  some chunks of chocolate microwave this mixture for 2-3 times in
                  a burst of 20 secs. Don’t keep this mixture in the microwave for
                  more than 20 secs as it will burn the chocolate
                • Continue till the chocolate is completely melted and you get a
                  smooth glossy thick liquid of chocolate
                • Chocolate Ganache is ready to use!!
