1. Greek Salad 2.

Caesar Salad

Ingredients: Ingredients:
- 4-6 cups mixed greens - 4-6 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved - 1/2 cup homemade or store-bought croutons
- 1 cup cucumber, sliced - 1/2 cup shaved Parmesan cheese
- 1 cup Kalamata olives, pitted - 1/4 cup Caesar dressing
- 1/2 cup crumbled feta cheese - 1 tsp. lemon zest
- 1/4 cup extra virgin olive oil
- 2 tbsp. red wine vinegar Instructions: Toss lettuce, croutons, and
- Salt and pepper, to taste Parmesan. Drizzle with Caesar dressing and
sprinkle lemon zest.
Instructions: Combine greens, tomatoes,
cucumber, olives, and feta. Drizzle with

- 8 oz. fresh mozzarella, sliced - 1 pint strawberries, hulled and sliced
- 1/4 cup extra virgin olive oil - 1/2 cup crumbled goat cheese
- 2 tbsp. basil, chopped - 1/4 cup chopped pecans
- Salt and pepper, to taste - 2 tbsp. balsamic vinaigrette
