Large Sponge Cake

Ingredients:
125g S.R. flour 100g soft margarine 100g caster sugar 2 eggs a little milk tin cooling tray

Equipment:
large bowl scales wooden spoon teaspoon plastic scraper large round cake

Options:
1 tablespoon cocoa 1 tablespoon coffee vanilla essence orange or lemon juice and rind

Oven:
Gas 6 / 200C

Cooking Time:
20-30 minutes

Method:
1. Put the oven on. 2. Collect equipment. Prepare the tin with grease and greaseproof paper. 3. Weigh out the flour, margarine and sugar. Beat together with an electric whisk. 4. Add egg and whisk some more. 5. Add whatever flavouring you have chosen. 6. Add a little milk to form a soft dropping consistency. 7. Spoon it carefully into the tin. 8. Place the cake carefully into the oven. DO NOT OPEN THE DOOR WHILST COOKING 9. Remove from the oven when cooked. 10. Check with a skewer, it should come out clean.

11. Remove from tin and place on cooling tray.
