Potato Cakes

Ingredients:
medium potato large slice of cheese onion plain flour

Equipment:
large bowl wooden spoon tablespoon fork sharp knife frying pan grater

Grate all of the potato into the large bowl. Get a clean tea towel and place potato in the centre. Pull all the corners together and squeeze the potato inside, this will get excess water and starch out. Place the potato into a large bowl. Grate cheese and onion and put into the bowl too. Add a tablespoon of flour onto the top as well. Mix this in with a fork. Put a tablespoon of flour onto the table and put all of the mixture onto it. Roll out into a cylinder shape and divide into three pieces. Take a piece at a time and with your hands push together and make a cake shape. Fry them in a little oil for 3-5 minutes on each side or until they are golden brown. Remove from the pan and place them on kitchen towel to drain off excess oil.
