Scones

Date & Orange Scones


What you need
2c S.R flour
1/3c caster sugar
Grated orange rind of 1 orange
50g butter
1/2c chopped pitted dates
Use orange juice plus enough milk to make liquid up to 165mls
Raw sugar, for sprinkling
What to do
 Heat oven to 190C
 Rub butter into flour then add sugar & orange rind
 Stir through chopped dates
 Make a well in centre of dried ingredients add liquid, mix with a knife
 Pat out & cut into 4 large or 8 small scones
 Place on baking tray, sprinkle with sugar
 Cook 20 minutes. Makes 6 large scones
Cheese Scone
What you need
2c S.R flour
85g butter
1 1/2c grated cheese
150mls milk
What to do
1. Heat oven to 190C
2. Rub butter into flour add grated cheese
3. Mix milk in using a knife
4. Pat out & cut into 4 large or 8 small scones
5. Place on baking tray & sprinkle with grated cheese
6. Cook 20 minutes or until golden
Lemonade Scones
What you need
2c flour
1T B.P
165mls lemonade
1/2c cream
What you do
1. Heat oven to 190C
2. Mix wet & dry ingredients stir with a knife
3. Pat into 4 large or 8 small scones
4. Place on tray & cook 20 minutes or until golden.

1c S.R flour 1/4c caster sugar
25g butter ¼ c chopped pitted dates
Use orange juice plus enough milk to make liquid up to 80mls
Raw sugar, for sprinkling Grated orange rind of ½ orange
What to do
 Heat oven to 190C
 Rub butter into flour then add sugar & orange rind
 Stir through chopped dates
 Make a well in centre of dried ingredients add liquid, mix with a knife
 Pat out & cut into 4 large or 8 small scones
 Place on baking tray, sprinkle with sugar
 Cook 20 minutes. Makes 6 large scones
Cheese Scone
What you need
1c S.R flour 1t B.P
40g butter
¾ c grated cheese 75mls milk
What to do
 Heat oven to 190C
 Rub butter into flour add grated cheese
 Mix milk in using a knife
 Pat out & cut into 4 scones
 Place on baking tray & sprinkle with grated cheese
 Cook 20 minutes or until golden
Lemonade Scones
What you need
1c flour
2t B.P
75mls lemonade
What you do
 Heat oven to 190C
 Mix wet & dry ingredients stir with a knife
 Pat into 4 large or 8 small scones
 Place on tray & cook 20 minutes or until golden.
Edmonds Classic scone Mix
Follow instructions on the back of the packet,
1½ c Scone mix
1/2c plus 3T water
½ c grated cheese & chopped herbs
Scones Preheat oven to 220ºC

Ingredients: Method:

1c flour 1. Sift dry ingredients together


2. Rub butter in till it looks like bread crumbs
Pinch of salt
3. Add sugar (& *fruit if wanted)
1T baking powder 4. Use a knife to mix in milk to make soft dough
5. Pat dough gently to 2cm thick, cut in 6 pieces
50g butter 6. Place onto a lightly floured baking tray.
7. Bake 10-12 minutes
2T sugar

⅓c milk
*e.g. grated
apple, sultanas,
dates, ¼t spice
