TakeLab 0.3.0: document always record and late undo interplay

README: always record in features and panel controls. Manual: new

- Comping sessions now end on ANY transport stop (not only the panel
  button) and restore every touched state: arms, mutes, overdub, loop
  toggle — plus resetAutomationOverrides() so no blue override icons
  linger. Fixes ghost lane-muting after a session and leftover UI state.
- Frequently-used toggles moved to the Studio I/O quick-access panel
  (DocumentState, per project): retake scopes, gesture, late undo,
  keep takes. Preferences keep only setup/calibration.
- Renamed QuickRetake -> TakeLab, vendor/author iuri.io, package
  io.iuri.takelab, version 0.2.0; getHelpFilePath points to the manual.
- Full English README rewrite, new docs/MANUAL.md, MIT LICENSE.
