PyTorch stopped shipping Intel Mac wheels after 2.2.2 and MLX is Apple
Silicon only, so `uv sync` failed on Intel. Intel Macs now get torch 2.2.2
and jax 0.4.38 (via mediapipe); every other platform resolves to the same
versions as before. required-environments makes `uv lock` check wheels for
all four shipped platforms.

On Intel the encoder stays on the CPU (MPS on AMD GPUs is unreliable), the
on-device cleanup model reports "Apple Silicon only", and the app launcher
compiles for the venv's architecture. Adds macOS CI on Apple Silicon and
Intel runners.

Closes #11

Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
Restore the "Mac only" note off macOS, leave setup.sh as it was (the MLX
preload already fails quietly on Intel), and keep doctor from importing vsr.

pynput picks its X backend at import and the runner has no display, so test
collection failed on main since #8. CI-only change.

Verified current head 60c0173 in a separate checkout with its locked dependencies: 49 passed, 11 native macOS/Windows skips, including real-video recognition; uv lock --check passes. Reviewed platform markers, Apple Silicon-only local cleanup, Intel CPU selection, and launcher architecture changes. GitHub records eight successful current-head runs across Linux, Windows, Apple Silicon, and Intel macOS (push/PR duplicates). Local validation is Linux plus mocked platform routing, not a physical Intel Mac camera/permissions/paste session; that hardware behavior remains unverified here.

Resolved the main-branch conflict at 9b5073b with an ordinary merge, no force push. Retained main’s Linux workflow exactly, including Xvfb wrappers, PortAudio and diagnostic handling. Intel runtime code, dependency constraints, launcher architecture and macOS CI are unchanged. The PR no longer changes Linux CI relative to main. Frozen-dependency full suite rerun: 49 passed, 11 native-platform skips, including real-video recognition. New native-platform checks are running; no merge has been performed.
