fix: correct typos in enhancement docs and scalability guide

Fix spelling errors in enhancement proposals and scalability documentation:

- Controler -> Controller
- snaphot/snaphost -> snapshot
- Defintition -> Definition
- Kubernetest -> Kubernetes
- Suppot -> Support
- PARAMETES -> PARAMETERS
- onn -> on
- messaage -> message
- retrival -> retrieval
- Iamge -> Image
- Sysytem -> System
- screenshoot -> screenshot

Rename files with typos:
- v2-encrpted-volume-stack.png -> v2-encrypted-volume-stack.png
- 20240612-backing-image-encryption-and-clone-supprt.md -> ...support.md

Update image reference in 20250107-v2-volume-encryption.md accordingly.
