As a vegetarian flirting with vegan (okay, a pescatarian, but that sounds like a religion) I find it difficult to get enough protein and iron in my diet. I like lentils and love my mom’s lentil soup recipe, but sometimes soup doesn’t seem exciting or substantive enough for dinner. And something about having wine with soup seems wrong.

Hearty lentil stew over parmesan polenta (hopefully cat-fur free)

So, I wanted to share a super easy-to-make lentil stew served over parmesan polenta (also surprisingly simple to make from scratch).  Apologies in advance for the lack of exact measurements but it’s a combo of a few people’s recipes so I was kind of making it up as I went along.

Readers, you might recall the last time I saw M___ he was making off with “my” Szechuan broccoli in garlic sauce (with brown rice). Before his great escape we’d made plans for dinner for the coming Sunday at 6pm.

Well, Sunday came and at 4pm I received a call from M___; he was running ahead of schedule and would be over in 20 minutes.  I took stock of my un-showered self and a living room where drying laundry hung from every imaginable surface. (more…)

I’ve had an on-again off-again relationship with meat over the years.  I don’t come from family of carnivores but my mother was convinced a child required a certain amount of meat to get all the necessary nutrients. Small pieces of meat were hidden under mounds of applesauce but I managed to find the offending morsels, cheek them, and spit them out after having finished lapping the applesauce.  When asked where hamburgers came from she answered “beef” knowing I’d never eat it if she said “cow.”

Beef?
