These golden anniversary cakes are always such a pleasure to bake. Here is a two tier white vanilla cake with chocolate mousse filling. Covered in white fondant, with a quilted diamond pattern, golden dragees, a scrolled number 50 and bouquets of yellow and gold sugar roses. Calla Lillies and Roses Wedding Cake

A three tier round wedding cake with lemon coconut cake and passion fruit cream filling, definitely a favorite combination this year with my brides.

The cake is covered in a pale violet fondant, each tier is surrounded by darker violet fondant ribbon and then covered with calla lillies and lavender colored roses cascading down its front.

Yellow Rose Bowl Wedding Cake

We were invited to display this wedding cake at Designer Loft in South Orange NJ for an exclusive Wedding Dress showing they organized this weekend. The four tier cake is covered in yellow fondant and has different embossed patterns on each tier. Other decorations include fondant bows and gold dragees. A sparkling sugar bowl decorated with full yellow and apricot color sugar roses and blossoms tops off the cake.

I also left a silver tray presentation full of chocolate fudge mini-cupcakes and Madagascar vanilla bean buttercream. Hope no-one touched the dresses after eating my awesome cake!

Roses and Daisies Bat Mitzvah Cake

Hand-made sugar roses and daisies adorn this beautiful Bat Mitzvah cake for a celebration at the Orange Lawn Tennis Club in South Orange NJ. Petal dust give the flowers in each bouquet an extra sheen and helps blend the apricot, peach, orange and pink colors. The white fondant is surrounded at the base of each tier with an embossed green fondant ribbon. Inside there is chocolate fudge cake with Madagascar vanilla bean buttercream and Red Velvet cake with Cream Cheese filling. I piped a message "Mazel Tov" on the top tier.

Ivory Rose Blossoms Wedding Cake

I was delighted to make this ivory wedding cake for a couple from Chatham NJ who were celebrating at the Crystal Springs Resort.

The three tier Red Velvet cake had a white chocolate ganache filling and was covered in fondant. Each tier was decorated with a white fondant ribbon and then topped with an arrangement of sugar roses and buds.

I wanted to add a few close ups of the roses, they turned out just right! Each rose has a deep ivory center, around which I paste individual sugar petals. The rose is built up over time after each layer of petals has been shaped and dried.

The berries are made of a greenish yellow sugar paste inserted onto a floral wire, several of which are bound together to create a mini-bunch. Once the roses were set on the top tier, I inserted the buds to add a final touch.
