The News Is In!

We are having a girl! We are so excited! She is healthy and cute and moves a TON! The doctor thinks she will talk with her hands a lot :) Sorry I don't have pics. I decided not to post them cuz we didn't get a video and it's really blurry when I take a picture of the picture. Anyways, Carson told me this morning he wanted a "boy sister." He got the sister part so hopefully that works for him!

Funnel Cakes

Well here's the funnel cake recipe I used for Valentine's Day due to some requests.

Country Fair Funnel Cakes
  • 3eggs
  • 1/4 cup sugar
  • 2 cups milk
  • 1 Tbs vanilla
  • 3 2/3 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 tsp cinnamon (optional)
  • vegetable oil, for frying
  1. Beat eggs, sugar and vanilla together and then add the milk slowly–beat. Add the dry ingredients and beat until smooth and creamy.
  2. Pour batter into a funnel and at the same time, use your finger to plug the hole. In a large cast iron pot, add 2 inches of oil to the bottom.
  3. When the oil becomes hot, move your hand over the pot and slowly release your finger so the batter can start cooking.
  4. Move the funnel around to make designs.
  5. Brown on both sides–then immediately remove and drain extremely well.
  6. Top with brown sugar, or honey, or cinnamon sugar, or powdered sugar as a topping.
Strawberry Sauce
1 pound frozen whole unsweetened strawberries, thawed
2 tablespoons granulated sugar
2 tablespoons fresh lemon juice

In a food processor or blender, process the strawberries, sugar, and lemon juice until smooth, about 1-2 minutes. If desired, strain the sauce through a cheesecloth, lined colander, or small sieve to remove strawberry seeds.

You don't have to use the strawberry sauce. I only did because it was Valentine's Day. It's actually really really good with butter and cinnamon on it. Pretty much whatever you feel like putting on it will work!

Over the Hill!




So it's sort of weird to ask your husband to take a picture of how fat you are getting! I didn't document anything when I was pregnant with Carson, but I figure I may want to look back to remember what my pregnancy was like (since I've been wishing I could this time). This is me at 20 weeks. It's a good feeling to know that it's more than halfway over and we will have a new little baby boy or girl in the family. We find out Wedn
esday by the way, so stay tuned.

I figured this would be a good time to document a comparison of this pregnancy and my pregnancy with Carson:
1. I have not thrown up once this entire time so far (Carson about every single day...for sure when I brushed my teeth, or ate certain foods).
2. I got a little nauseous the first few weeks, but nothing I couldn't handle! I was completely over that at about 12 weeks, and with Carson it was at least 20!
3. I feel like this baby is soooo low! You can tell by my pic. I know Carson was low, but when this baby kicks it's far enough down that it would be a little awkward to have somebody feel it :)
4. Cravings so far...STRAWBERRIES!!!! Can't live without them. Other than that, in the beginning I felt like I wanted salty foods like chips, fries, crackers, stuff like that. Now anything fruit is great!
5. My nails are not growing longer, I'm not sure that I'm anymore tired than I would be anyways, I am a lot more easily irritated and less emotional than with Carson.
6. With Carson, bum shrunk, this time bum is growing. Bummer! Haha

So there are the things I've noticed to this point, I don't know what those things mean, but we will see soon! Enjoy the fat pic cuz I probably won't do too many more of those :)

Valentine's Day

We had a very fun Valentine's day this year! It became one of my favorite holidays. We started out the fun on Valentine's Eve. Carson and I went and picked out his Valentines to give to all of his friends. We came home later and had our Valentine's dinner, which was heart warming beans and red juice! Carson and Harris love heart warming beans, so it was a hit! Then we had a delicious red dessert.



Then, we woke up Valentine's Day to our little gifts. Carson got a toolbox fill with little candy tools and some Lightning McQueen colored pencils. We also got hooked up with candy, of course! Then I made a heart breakfast. It turned out delicious! They were heart shaped funnel cakes, with strawberry sauce, and Harris' request, bacon! They loved that as well!


Then we got ready for the day and Carson and I headed out on our date! We went to McDonald's (shows how much I love my little guy because I hate those places). He played for about an hour or so. It was fun to see how excited he was to go there. Then we came home, got a babysitter, and I went out on another date to Tucanos. Let me just say it was totally delicious! Way to much food but it's hard to resist! I loved the environment and to top it off they even gave all the girls roses (Tucanos did, not our husbands)! We went home full enough to get us through the rest of the week it seemed like! Anyway, we had a lot of fun. It was exciting to me to go to a restaraunt that was different and nice instead of the usual Red Robin or pizza :) I love my family and had a great time with them!

Handy Man

About two weeks ago Harris decided to put together the new grill my parent gave us for Christmas. Carson, got so excited. He ran and got his tool box and started helping Harris put it together. He worked on the whole thing with Harris, and really did help. He screwed in all of the screws by himself. He was so excited about it, but we realized the whole time they were putting it together, he thought it was a car. He was a little disappointed it wasn't, but still had a blast putting it together. To make it even more cute, he was wearing his plaid shirt!

BEAUTIFUL!!!

So this is a picture-less post, but just had to make sure I remember this comment! Tonight Harris and Carson had Boy's Night since I had YW's. They went to Home Depot to get a few things. They were walking in to the store and Carson looks at it and said, "Daddy, this is BEAUTIFUL." Haha I just think it's hilarious that Home Depot is such a dream come true for him! Anyways, pretty dang cute.
