6 on Sunday (late post)

This post is two days late.  Better late than never.

My 6 favorite things from last week:

1. Mandy's Recipe Box
I am loving this cooking/baking blog.  She posts lots of great recipes that I can't wait to try!



2.  Oktoberfest Beer
I am not a fan of beer, but I bought this beer for Brent last week in preparation for our weekend spent at Oktoberfest in our town square.  Come to find out, I really liked this beer!

3. Snack Size Fancy Cheese
Trader Joe's - you rock!  
Check out these snack size Goat Cheese and Brie.
The packs contain about 6 snack size cheeses.
These are PERFECT for the cheese lover in me who wants some cheese and crackers for a late afternoon snack!


4. Caramel Apple Pops
Every year, during this time of year, I'm grabbing bags of these lollipops!
I finally bought our first bags for the season last week.
My entire family LOVES them!


5. Speculoos Cookies
Again, Trader Joe's, you rock!
A crisp, caramelized, cinnamon spiced Belgian cookie
I have one of these cookies each day alongside my cup of coffee.
I dunk them in my coffee



6. Pumpkin Cranberry Crisps
Oh, Trader Joe's, this whole post almost ended up being all about you 
and the fabulous items in your store right now!
I saw someone else recommend these crisps, so I bought them last week to try.
These crisps alongside a snack size cheese (from above) are my go-to afternoon snack!

Tomato Basil Soup

I usually cook a chili every Sunday during football season, but this past weekend I didn't plan ahead for that.  So when Sunday rolled around, I asked the husband what he wanted to eat while he watched the Sunday games.  His response "reuben sandwiches and a soup of some sort"

What soup goes with a reuben?  I didn't want anything too heavy or creamy, so I decided on a simple tomato based soup.
This soup was so easy to make and took no time at all!
(a nice break from cooking chili)


INGREDIENTS
  • 3 Tbsp butter
  • 1 large onion, chopped
  • 6 garlic cloves, chopped
  • 2 cans of Cento Italian Tomatoes (approx 70 ounces)**



  • 2 quarts homemade chicken stock (read my method here)
  • ½ bunch fresh basil (approx 1 cup loosely packed leaves)
  • ½ cup half & half
  • salt and pepper to taste
  • Parmesan cheese, to taste
INSTRUCTIONS
  1. In a large 5-6 quart capacity pot, melt butter over medium heat and add onions; cook until translucent, approximately 3-5 minutes.
  2. Add garlic and cook for 3-4 minutes, until aromatic.
  3. Add tomatoes and stock and bring to a boil. Reduce heat to a simmer, cover and cook for 20 minutes.
  4. Add basil, tearing the leaves and stems (if using) as you go.


  1. Puree with an immersion blender until smooth. Turn off the heat and add cream while stirring. Serve with salt, pepper and Parmesan cheese to taste.


This recipe made so much soup!  I think we will be having a bowl of this tomato soup each night for the entire week, and it probably still won't be gone.
Husband gave this a double thumbs up!

(And the reuben recipe I made….it was good. But the kids didn't care for it. Not sure it was good enough to make again so I'm not going to post that recipe)

10 Ways You're Making Your Life Harder
 Than It Has To Be


1. You ascribe intent.

Another driver cut you off. Your friend never texted you back. Your co-worker went to lunch without you. Everyone can find a reason to be offended on a steady basis. So what caused you to be offended? You assigned bad intent to these otherwise innocuous actions. You took it as a personal affront, a slap in the face.
Happy people do not do this. They don’t take things personally. They don’t ascribe intent to the unintentional actions of others.

2. You’re the star of your own movie.

It is little wonder that you believe the world revolves around you. After all, you have been at the very center of every experience you have ever had.
You are the star of your own movie. You wrote the script. You know how you want it to unfold. You even know how you want it to end.
Unfortunately you forgot to give your script to anyone else. As a result, people are unaware of the role they are supposed to play. Then, when they screw up their lines, or fail to fall in love with you or don’t give you a promotion, your movie is ruined.
Lose your script. Let someone else star once in awhile. Welcome new characters. Embrace plot twists.

3. You fast forward to apocalypse.

I have a bad habit of fast forwarding everything to its worst possible outcome and being pleasantly surprised when the result is marginally better than utter disaster or jail time. My mind unnecessarily wrestles with events that aren’t even remotely likely. My sore throat is cancer. My lost driver’s license fell into the hands of an al-Qaeda operative who will wipe out my savings account.
Negativity only breeds more negativity. It is a happiness riptide. It will carry you away from shore and if you don’t swim away from it, will pull you under.

4. You have unrealistic and/or uncommunicated expectations.

Among their many shortcomings of your family and friends is the harsh reality that they cannot read your mind or anticipate your whims.
Did your boyfriend forget the six and a half month anniversary of your first movie date? Did your girlfriend refuse to call at an appointed hour? Did your friend fail to fawn over your tribal tattoo?
Unmet expectations will be at the root of most of your unhappiness in life. Minimize your expectations, maximize your joy.

5. You are waiting for a sign.

I have a friend who won’t make a decision without receiving a “sign.” I suppose she is waiting on a trumpeted announcement from God. She is constantly paralyzed by a divinity that is either heavily obscured or frustratingly tardy. I’m not disavowing that fate or a higher power plays a role in our lives. I’m just saying that it is better to help shape fate than be governed by it.

6. You don’t take risks.

Two words: Live boldly. Every single time you are offered a choice that involves greater risk, take it. You will lose on many of them but when you add them up at the end of your life you’ll be glad you did.

7. You constantly compare your life to others.

A few years ago I was invited to a nice party at a big warehouse downtown. I was enjoying the smooth jazz, box wine and crustless sandwiches. What more could a guy want? Later in the evening I noticed a steady parade of well-heeled people slide past and disappear into another room. I peeked and saw a large party with beautiful revelers dancing and carrying on like Bacchus. Suddenly my gig wasn’t as fun as it had been all because it didn’t appear to measure up to the party next door- a party I didn’t even know existed until just moments before.
I do this frequently. Those people are having more fun. Mary has a bigger boat. Craig gets all the lucky breaks. Ted has more money. John is better looking.
Stop it.
Always remember what Teddy Roosevelt said: “Comparison is the thief of joy.”

8. You let other people steal from you.

If you had a million dollars in cash under your mattress, you would check it regularly and take precautions to insure it is safe. The one possession you have that is more important than money is time. But you don’t do anything to protect it. In fact you willingly give it to thieves. Selfish people, egotistical people, negative people, people who won’t shut up. Treat your time like Fort Knox. Guard it closely and give it only to those who deserve and respect it.

9. You can’t/won’t let go.

These are getting a little harder aren’t they? That’s because sometimes you have to work at happiness. Some hurdles are too difficult to clear by simply adjusting your point of view or adopting a positive mindset.
Do you need to forgive someone? Do you need to turn your back on a failed relationship? Do you need to come to terms with the death of a loved one?
Life is full of loss. But, in a sense, real happiness would not be possible without it.  It helps us appreciate and savor the things that really matter. It helps us grow. It can help us help others grow.
Closure is a word for people who have never really suffered. There’s no such thing. Just try to “manage” your loss. Put it in perspective. You will always have some regret and doubt about your loss. You may always second guess yourself. If only you had said this, or tried that.
You’re not alone. Find someone who understands and talk to that person. Reach out for support. If all else fails, try #10 below.

10. You don’t give back.

One way to deal with loss is to immerse yourself in doing good. Volunteer. Get involved in life.
It doesn’t even have to be a big, structured thing. Say a kind word. Encourage someone. Pay a visit to someone who is alone. Get away from your self-absorption.
When it comes down to it, there are two types of people in this world. There are givers and there are takers. Givers are happy. Takers are miserable. What are you?

German Chocolate Pecan Pie Bars

Ingredients
  • 3 cups pecan halves
  • 1 & 3/4 cups all-purpose flour
  • 3/4 cup confectioners' sugar
  • 3/4 cup cold butter, cubed
  • 1/4 cup unsweetened cocoa
  • 1 & 1/2 cups semisweet chocolate chips
  • 3 large eggs
  • 3/4 cup firmly packed light brown sugar
  • 3/4 cup light corn syrup
  • 1/4 cup unsalted butter, melted
  • 1 cup sweetened flaked coconut
Instructions
Preheat oven to 350°.
Arrange pecans in a single layer of a shallow baking pan. Bake 8-10 minutes or until lightly toasted. Stir halfway through baking.
Line bottom and sides of a 9"x 13" baking pan with aluminum foil, leaving an overhang on two short sides. Grease foil.
Whisk together flour, confectioners' sugar, and cocoa. Add cold butter, and combine with a pastry blender* until mixture resembles coarse meal. Press mixture into bottom and about 3/4-inch up sides of prepared pan.
Bake crust for 15 minutes. Remove from oven and immediately sprinkle chocolate chips evenly over crust. Allow to cool on a wire rack at least 30 minutes.
Place eggs in a large mixing bowl, and beat lightly. Add brown sugar, corn syrup, and melted butter. Whisk together until smooth. Stir in coconut and pecans. Pour evenly over partially baked crust.
Bake 28-34 minutes, or until edges are golden and filling has set. Cool completely on a wire rack. Then, refrigerate for an hour.
Using foil overhang, lift bars from pan and place on a cutting board. Use a sharp knife to cut into bars.

Nutella No-Bake Cookies

I love a delicious no-bake recipe!

Ingredients
  • 2 cup sugar
  • 1/4 cup cocoa
  • 1/2 cup milk
  • 1/2 cup margarine
  • 1 tsp vanilla
  • pinch of salt
  • 1/4 cup peanut butter
  • 1/4 cup Nutella
  • 3 cup quick oats
Instructions
  1. Over medium heat, cook sugar, cocoa, milk and margarine. Boil one minute. Remove from heat. Stir in vanilla, salt, peanut butter, Nutella and oats. Stir until combined. Drop by teaspoon on wax paper and cool. Refrigerate. Eat. Repeat.


These are addicting!  I keep mine in a closed container in the fridge.  
They taste even better when they are chilled!

So pleased!


2. Pumpkins

I've been looking for pumpkins all week.  Not one of my neighbors has any out on their porches yet, nor have they arrived in the stores I usually purchase them at.  But Lowe's had them this week while I was there, and I grabbed a couple.  So happy my front porch is now Fall Ready.


3. Pumpkin Spice and Autumn Harvest K-Cups

I picked these up at the store this week because I was running low on K-Cups.

4. Trader Joe's - McKinney

A Trader Joe's just opened up yesterday 5 minutes from my house.  This is awesome, friends!
I didn't go to the Grand Opening because of the chaos that would probably be there, but I do plan to go check it out on Monday!!!!


5. Caramel Apple Oreos

Buy these! Today! They are sooooo good!  I found mine at Target.  I'll admit some of the recent new Oreo flavors I haven't liked, so I was hesitant to try these.  But with it being Fall and the season for anything caramel apple related, I grabbed them.  Best store purchase this week!



6. J Crew Factory Vest

I am lucky enough to live 5 minutes from a huge outlet mall with lots of brand name and designer stores.  J Crew has an outlet store in this mall and I love it!  Honestly, I'm not quite sure the prices are any better than the non-factory outlet stores, but still…..It's JCrew, and it's close to my house!
I bought this outerwear vest this week and can't wait to start wearing it!  I love vests, but not those ever popular puffer vests….so these thinner, lightweight vests from JCrew (that will last a lifetime) are my go-to vests.  They have several colors and patterns…go check them out!

Pumpkin Chocolate Chip Dessert Bread


I'm so happy to announce that my first recipe using pumpkin this season was a HIT!

Last weekend I baked this Pumpkin Chocolate Chip Dessert Bread. 
I actually made two loaves, so I shared some of the bread with three different friends!
They all raved about it!

Ingredients:

  • 1 and 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg*
  • 1/4 teaspoon ground cloves*
  • 3/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (100g) light or dark brown sugar
  • 1 and 1/2 cups (340g) pumpkin puree (canned or fresh)
  • 1/2 cup (120ml) vegetable oil, canola oil, or melted coconut oil
  • 1/4 cup (60ml) orange juice
  • 2/3 cup (120g) semi-sweet chocolate chips*
Directions:
Adjust the oven rack to the lower third position and preheat the oven to 350F degrees. Lowering the oven rack prevents the top of your bread from browning too much too soon. Spray a 9x5 inch loaf pan with non-stick spray. Set aside.
In a large bowl, whisk the flour, baking soda, cinnamon, nutmeg, cloves, and salt together until combined. In a medium bowl, whisk the eggs, granulated sugar, and brown sugar together until combined. Whisk in the pumpkin, oil, and orange juice. Pour these wet ingredients into the dry ingredients and gently mix together using a rubber spatula or a wooden spoon. There will be a few lumps. Do not overmix. Gently fold in the chocolate chips.
Pour the batter into the prepared loaf pan. Bake for 60-65 minutes, making sure to loosely cover the bread with aluminum foil halfway through to prevent the top from getting too brown. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs. This may be before or after 60-65 minutes depending on your oven, so begin checking every 5 minutes at the 55 minute mark or so.
Allow the bread to cool completely in the pan on a wire rack before removing and slicing. The bread will stay fresh in an airtight container (it tastes better on day 2!) at room temperature or in the refrigerator for up to 10 days. But it won't last that long.
FREEZING: Baked bread may be frozen up to 3 months. Thaw overnight in the refrigerator.
*You may use 1/2 teaspoon pumpkin pie spice instead of these spices. 
*Try using milk chocolate, white chocolate, dark chocolate, or even pecans/walnuts instead of the semi-sweet chocolate chips.
*This recipe makes incredible pumpkin chocolate chip muffins too – about 17-18 minutes in the oven, same oven temperature.

My favorites from the week:

1. Nick's 1st Care Package
I gathered some items and sent Nick his first care package this week.  
I had fun shopping for some of his favorite things, plus some necessities. 
I plan to make this a monthly treat for him and he's already asking, 
"so what am I going to get next month?"


2. Bible Study Fellowship (BSF)
Each year I try to join our local BSF group.  BSF is an international non-denominational bible study that meets once a week.  This year we are studying the Life of Moses.  Our first meeting was this week and I just know it's going to be a great year!!

3. White Board
Yes, this white board has helped me tremendously.  Probably my best purchase of the week.
With everyones crazy schedule in this household, I needed a way to map out the entire week for the entire family to see.  My phone and notebook calendar just weren't cutting it.  I still use those, but this calendar is visible in the kitchen for the family to see anytime.  It includes activities, to do lists, and the dinner plan for each day. I am LOVING it because it's made my life EASIER!




4. Fall Cupcakes
The kids had early release on Friday, it was raining outside, the temperatures were dropping, so it was the perfect time to bake!  We picked out some fun Fall themed cupcakes and had a blast!  I baked the cupcakes that morning while the girls were in school…that way they were cooled and ready to be decorated once they got home.

5. Starbucks Caramel Apple Cider
I look forward to this drink every Fall/Winter.  If you haven't tried it, you must!


6. Dolphin Tale 2
It came out on Friday and we saw it Saturday afternoon!
If you haven't seen Dolphin Tale 1, rent it.  Then go see Dolphin Tale 2.
If you don't already want to be a marine biologist when you grow up (because that's what Ashlan and I want to be), then you'll leave this movie wanting to!!!!

My favorites from this week were:

1. Pumpkin Scent Candles
While I was at Home Goods this past week, I grabbed a couple pumpkin scented candles.
It's September, friends!  That's when my Fall starts.  I stocked up on Fall scented candles and Fall candies, specifically candy corns!


2. Black/White Halloween Pumpkins
I found these at Home Goods this week and fell in love.  They are heavy, sturdy, and the perfect splash of Halloween black to mingle with my orange pumpkins on the front porch (which I haven't bought yet)  These pumpkins were $19.99/each which was a bit of a splurge since I bought three of them, but they will last a long time and they really can be used anywhere for Halloween decor.
If there is a Home Goods near you, check them out.  They have some really neat Halloween/Fall decor right now (I shop at the one in Allen)



3. College Football
We love football season, specifically college football!
Our teams are Baylor and Notre Dame.  Two games into the season for both and their seasons are looking fantastic!





4. Reverse Regimen from Rodan + Fields
I struggle with sun spots on my face.  Some are very visible while others only I notice.
I have tried several ways of treating them (freezing, laser, etc) with two different dermatologists. Those treatments either didn't work at all, or worked for a very short amount of time before the spots resurfaced.  I finally decided to try this product from R+F.  It's not cheap, BUT it was cheaper than the treatments I was getting monthly at the dermatology office.  I have been using this product for a month (applying once a day) and I can't say how happy I am with the results.
If you are dealing with sun spots (the product also helps with other skin issues, as well) you should consider trying this.  Check out the product here



5. The Birthday Boy
This incredible guy had a birthday this week. And what was on his birthday list:
1. a guitar amp (which he bought for himself)

Blueberry Buttermilk Coffeecake

I had quite a bit of buttermilk left over from a recipe I made last week.
I went to allrecipes.com and searched recipes by ingredient just by typing in 'buttermilk'.
This recipe came up for Blueberry Buttermilk Coffeecake.  It required two cups of buttermilk which is about what I had left to use up.  Perfect….time to bake.


INGREDIENTS:
1/2 cup butter
1 1/3 cups white sugar
2 eggs
1 teaspoon vanilla extract
2 cups buttermilk
4 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups blueberries
2/3 cup all-purpose flour
2/3 cup white sugar
6 tablespoons butter, softened
DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together 4 cups flour, baking powder, baking soda and salt. Set aside.
2.In a large bowl, cream together 1/2 cup butter and 1 1/3 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated. Sir in blueberries. Pour batter into prepared pan. In a small bowl, combine 2/3 cup flour and 2/3 cup sugar. cut in 6 tablespoons butter until mixture resembles coarse crumbs. Sprinkle over top of batter.
3.Bake in the preheated oven for 45 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

This recipe is delicious!  All I wanted to do was use up my buttermilk, but I think I actually found a recipe that I will make over and over.  It's great for dessert, it's great for breakfast alongside a cup of coffee, it's a great snack…  This cake is simply delicious!
