Gluten-Free Salted Caramel Chocolate Chip Cookie

My friend asked if I would make her some gluten-free cookies....uh, YES!
This gluten-free treat is this week's cookie.
When is salted caramel and chocolate NOT a good thing? It's always a good thing.

Ingredients
  • 2 Cups gluten free all purpose flour * see notes
  • 3/4 Cups unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 Cups unsalted butter * softened
  • 2 Cups granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/2 Cup chocolate chips
  • 1/2 Cup Kraft caramel squares * diced small (chip size)
  • kosher salt * or flake salt
Instructions
  1. Preheat your oven to 350°F.
  2. In a medium bowl, combine the gluten free flour, cocoa powder, baking powder, baking soda, and salt. Mix well and set aside.
  3. Add the butter and sugar to the bowl of an electric mixer. Cream together on medium speed until completely smooth. Lower the speed and add the eggs one at a time, then the vanilla.
  4. Gradually add the flour mixture to the wet ingredients and mix until well combined.
  5. Stir in the chocolate chips and salted caramel pieces.
  6. Drop by the tablespoon full about 2 inches apart on a baking sheet (I use a Silpat Mat to prevent sticking)
  7. Bake 9-10 minutes until cooked through.
  8. Remove from the oven and sprinkle on the salt.
  9. Allow to cool on the baking sheet for about 5 minutes before transferring to a cooling rack to prevent breakage

Salted Shortbread Chocolate Chunk Cookies

I was immediately drawn to these cookies because they are a shortbread cookie.  I love a shortbread cookie, but I have to admit that I've never tried to follow a recipe and bake one.
Let's just say that I'm not posting my final product at the bottom of the post like I usually do.  I don't know what I did wrong, but my cookies looked nothing like the picture below.  They tasted like a shortbread cookie.  In fact, they tasted great.  But they looked nothing like the picture.

If anyone wants to try this recipe, let me know if your cookies turn out looking like the cookies below.  Good luck.

Ingredients
  • 1 cup plus 2 tablespoons (2 1/4 sticks) cold salted butter, cut into 1/2-inch pieces
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 6 ounces dark chocolate chopped (you want chunks)
  • 1 large egg, beaten
  • Sparkling sugar, for rolling
  • Flaky sea salt, for topping (like Maldon's sea salt)
Instructions
  1. In the bowl of stand mixer fitted with the paddle attachment (alternatively you can also use a mixing bowl with an electric mixer), beat butter, sugars, and vanilla on medium-high until super light and fluffy, about 3-5 minutes.
  2. Scrape down the sides of the bowl with a spatula. With the mixer on low, carefully add the flour then the chocolate chunks. Beat just enough to blend.
  3. Divide dough in half then place each half on a large piece of plastic wrap. Fold plastic over to cover dough and to prevent your hands from getting all sticky. Using your hands, form dough into a log shape. Each half should form logs that are 2–2 1/4" in diameter. Chill until firm, about 2 hours.
  4. Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with a silicone baking mat or parchment paper.
  5. Unroll the logs of dough then brush them with the egg on all sides. Sprinkle and coat the logs in sparkling sugar and gently pat them to get them to stick. It's okay if it's not totally coated.
  6. Slice each log about 1/2"-thick rounds. Place on prepared baking sheet about 1-inch apart. Sprinkle with sea salt.
  7. Bake for 12-15 minutes, or until the edges are just beginning to brown. Let cool on baking sheet for 5 minutes then transfer to a wire rack to cool completely.

Bailey's Chocolate Dipped Cookies

Since St. Patrick's Day is just a couple days away, I wanted to find a cookie to compliment that day.
This Bailey's Chocolate Dipped Cookie was the winner.
So make your corned beef and cabbage, follow it with this cookie treat, and don't forget to wear your green!

1 cup butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
1/4 cup Baileys Irish Cream
1 egg
1/2 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking soda
1/4 cup dark cocoa powder
1 tsp cornstarch
1 1/2 cups white chocolate chips
sprinkles, optional

Preheat oven to 350 degrees F.
Cream butter and sugar together until light and fluffy.
Mix in the Baileys, the egg and vanilla. Beat until well combined.
Add the remaining dry ingredients and mix until smooth.
Make balls about 1 tbsp in size and press until slightly flat.
Place on parchment lined cookie sheet.
Bake for 6-7 minutes.
While cookies are cooling melt white chocolate chips in a small bowl in the microwave.
Use 30 second increments, to avoid burning the chocolate
Dip cookies, one at a time into the chocolate. Place on parchment paper, decorate with sprinkles (optional)
Let stand for 20 minutes for chocolate to harden
Store in an airtight container or zipper bag for up to 7 days.

George W. Bush's Cowboy Cookies

Fact about me: one of my favorite presidential families is the Bush family.

As the original recipe blogger said, 
"I don’t know if they were named after GW 
or if the name existed before they became a GW favorite? No idea."

My theory is that these cookies were made specifically for him because that's what he requested and they were his favorites.

And they may very well be a favorite of mine now.

George W. Bush’s Cowboy Cookies

1 stick butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1 cup flour
1/2 Tbs baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 cup oats
3/4 cup coconut
1 cup semi-sweet chocolate chips
3/4 cup chopped pecans
3/4 cup cornflakes

Directions

Cream butter and sugars. Add eggs and vanilla. Beat. Add dry ingredients and mix until blended. Stir in remaining ingredients. Drop by spoonfuls onto greased cookie sheet. Bake at 350-degrees for 10-12 minutes.
