One Pot Ground Beef Stroganoff

This meal was a HUGE hit this week!  
My family loves Beef Stroganoff so I make it often, but always in the crockpot.
When I found this "one-pot" recipe, I jumped on it. 
It was delicious!!!



INGREDIENTS
1 pound extra lean ground beef
½ cup diced yellow or white onion
1 tablespoon chopped garlic
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon paprika
1 teaspoon dried minced onions
3 cups water
4 cups egg noodles, uncooked
1 cup frozen peas
1 teaspoon Dijon mustard
1 cup cream
½ cup sour cream

INSTRUCTIONS
In a large pot or skillet, saute the diced onions in olive oil on medium heat until soft
Add the grown beef, break up with a spoon, and cook until brown
Add the garlic, salt and pepper
Add the water and egg noodles, cover and cook on high heat until noodles are soft
Stir in the peas, minced onions and paprika
Reduce heat to medium, and stir in the cream, sour cream and Dijon mustard
Let simmer until sauce starts to thicken, serve, and enjoy!

Crockpot Italian Zucchini Casserole

When I was searching for weekly dinner options last week, this picture caught my eye.  
I love anything with zucchini and so does the rest of my family, so I knew this would be on the menu for the week.  Plus, anything that can be cooked in the crockpot is a plus!
This meal did not disappoint.  We had no leftovers!



Ingredients:
1 lb ground beef, cooked and drained
1 green pepper, diced
3 zucchini, chopped
16 oz spaghetti sauce
15 oz diced tomatoes, undrained
2 cups brown rice, uncooked
1 teaspoon garlic powder
1 tablespoon dried, minced onion
1 teaspoon Italian seasoning
1 cup mozzarella cheese

Instructions:
Dice vegetables while ground beef is browning in pain, drain.
Place vegetables, ground beef, and all other ingredients except cheese into the Crockpot.
Stir until combined well, cover, and cook on low for 4 hours.
Sprinkle cheese over top, cover, and cook an additional 10 minutes or until cheese is melted.





We ate this meal so fast that I didn't have a chance to snap my own picture.
But I will definitely be making this recipe again!
