Easy Mexican Pasta Salad


It's no secret I love a good pasta salad.  A cold one.  During the Spring and Summer months, I typically always have some sort of cold pasta salad in my fridge that I snack on throughout the day.

Here's a cold pasta salad with a mexican flare.  So good!


What you need:

1 (16-ounce) box rotini tri-colored pasta, cooked and drained according to package directions
2 cans black beans rinsed and drained well
1 small bag frozen corn, thawed and drained
1 can (10-ounces) Rotel, drained
4 green onions, chopped
1/2 bell pepper, chopped
1/4 cup white onion, chopped
2-3 Tablespoons fresh cilantro, chopped
1/2 to 3/4 cup italian dressing, or to taste

Mix all ingredients together and refrigerate for at least 2 hours. Serve cold.

I've been snacking on this salad for days now. Delicious!

Easy Creamy Crockpot Salsa Verde Chicken

Want a good chicken taco recipe?  Cook your chicken in the crockpot with a jar of salsa verde and a block of cream cheese....  It's so good!

You will need:

4 pounds boneless skinless chicken breasts (about 5-6 large)
1 teaspoon ground cumin
1 teaspoon garlic powder
8 ounces cream cheese, cubed
2 cups salsa verde (I love Trader Joe's)

Directions:
Add chicken to the crockpot, and then top with seasonings, cubed cream cheese, and salsa.
Cover and cook on low for 6-8 hours.
Shred the chicken with two forks.
Use a whisk to mix the remaining sauce in the crockpot.
The cream cheese may look a little lumpy, but it will smooth out as you stir.
Add the shredded chicken back to the crockpot.
Cook on low for another half hour to allow the chicken to absorb the creamy salsa verde sauce.
I usually turn my crockpot to the "warm" setting at this point.
The sauce will thicken up slightly as it cools.

I topped our tacos with romaine lettuce, monterey jack cheese, diced avocado and a drizzle of sour cream.

The chicken was slightly spicy...but my entire family likes some spice in their foods.  
Loved this easy dish!
(I opted to use flour tortillas for soft tacos)
