Almond and coffee cake / Bolo de Café e amêndoa.



Another recipe that was made a few weeks ago and that I have to share with you.
This cake is so delicious that I can tell you that it was the quickest cake to be eaten in this household.
I haven't tasted it yet and suddenly, my husband said: "This cake is truly delicious". I looked over and I just had the time to say: "Can I taste a bit please, so I can testify when I post the recipe?", and that was it. I had a bite and there was no more cake to tell the story.
Saying that, I think I didn't have to have more cake, because my family are my best critics and if the cake disappeared so quick, that is a sign that it was truly delicious.
The recipe is from the beautiful Chetna Makan "The Cardamom Trail" book. A book that I already gave you my opinion here and, as I got the book the same day that I got the golden crown tin that celebrates the 70th Anniversary of Nordic Ware (as you can see here), I decided that same day, that this cake would be the first cake baked in that gorgeous tin.
The beautiful golden cake stand, is from a very talented portuguese food blogger and artist (Patrícia from the blog Coco e Baunilha).



ingredients (serves 10 to 12):
175g unsalted butter, softened + extra for greasing
175g golden caster sugar
3 large eggs
150g self raising flour
1/2 tsp baking powder
50g ground almonds
2 tbsp milk
2 tbsp coffee granules dissolved in 1 tbsp boiling water
20g flaked almonds + extra to decorate (optional)
method:
Preheat the oven to 180ºC. Grease a bundt cake tin or any 25cm cake tin.
Cream the butter and sugar together until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Add the flour, baking powder, ground almonds, milk and dissolved coffee.
Beat the mixture for 1 minute until well combined.
Fold in the flaked almonds (if using).
Pour the batter into the prepared tin and bake for 35 to 40 minutes or until a skewer inserted in the centre of the cake comes out clean.
Leave to cool in the tin for 10 minutes, then turn on to a wire rack and leave to cool completely.


for the icing:
35g unsalted butter
100g icing sugar, sifted
1 tbsp cocoa powder
2 tbsp boiling water
method:
Melt the butter in a small saucepan over a low heat.
Take the pan off the heat and stir in the icing sugar.
In a cup, stir the cocoa powder into the boiling water until dissolved. Add to the icing sugar mixture and beat until the icing is smooth.
Pour the icing over the cooled cake and, if using, sprinkle the extra flaked almonds on top.
This cake will keep for 5 days in an airtight container.

Mais uma receita que já foi feita há umas semanas, mas que tem mesmo de ser partilhada.
Nunca um bolo desapareceu tão rapidamente cá em casa! Posso assegurar que, à velocidade que foi comido, quando dei por ele, estava o meu marido com a última fatia no prato e a murmurar "este bolo é mesmo maravilhoso..". Olhei... e só tive tempo de dizer: "Posso provar, para poder dizer de minha justiça quando publicar a receita?". E assim foi, só tive direito á dentada da prova e nem vale a pena dar a minha opinião, pois acho que este relato já diz tudo sobre o bolo.
A receita, é do livro lindo da Chetna Makan, o "The Cardamom Trail", do qual já aqui vos falei.
Acrescento ainda que, como podem constatar aqui no meu instagram, recebi o livro no mesmo dia em que recebi a linda forma dourada, a "crown" da Nordic Ware, que é a forma comemorativa dos 70 anos da marca.
Decidi no próprio dia que seria, este, o bolo a estrear a forma e assim foi!!
Quanto ao lindo "cake stand" dourado (que adoro de paixão), é da autoria da nossa querida Pierre Hermé do Sul, a Patrícia, do blog Coco e Baunilha.


ingredientes (para 10 a 12 fatias):
175g manteiga sem sal, amolecida + extra para untar a forma
175g açúcar refinado amarelo
3 ovos grandes (L)
150g farinha de trigo branca com fermento
1/2 colher chá de fermento em pó
50g amêndoa ralada
2 colheres sopa de leite gordo
2 colheres sopa de café granulado (instântaneo), desfeito em 1 colher sopa de água a ferver
20g amêndoa laminada + extra para decorar (opcional) - eu não usei


preparação:
Aquecer o forno a180ºC. Untar muito bem uma forma para bundt, ou outra forma a gosto, com cerca de 25cm de diâmetro.
Na taça da batedeira eléctrica, bater a manteiga com o açúcar, até obter uma mistura cremosa e macia.
Adicionar os ovos, um de cada vez, batendo bem entre cada adição.
Adicionar a farinha, o fermento, a amêndoa ralada, o leite e o café dissolvido e bater tudo, por cerca de 1 minuto ou até todos os ingredientes estarem bem incorporados.
Caso usem, adicionar a amêndoa laminada e envolver com uma espátula.
Deitar a mistura na forma preparada e levar ao forno por cerca de 35 a 40 minutos, ou até um palito inserido no meio do bolo sair limpo.
Deixar o bolo arrefecer na própria forma por cerca de 10 minutos, antes de desenformar sobre uma grelha para completo arrefecimento.
para a cobertura:
35g manteiga sem sal
100g açúcar em pó, peneirado
1 colher sopa de cacau em pó
2 colheres sopa de água a ferver
preparação:
Derreter a manteiga num tachinho sobre lume brando.
Retirar o tacho do lume e adicionar o açúcar em pó, batendo muito bem com uma vara de arames.
Numa taça à parte, dissolver o cacau em pó com a água a ferver.
Adicionar o cacau desfeito na águia à mistura da manteiga e bater bem, até obter uma mistura cremosa.
Deitar esta mistura sobre o bolo arrefecido e, caso utilizem, decorar com as amêndoas laminadas.
O bolo manter-se-à fresco por 5 dias (cá em casa durou menos de 1 dia...), desde que bem acondicionado num recipiente de fecho hermético.

Clove, cinnamon and chocolate cookies / Cookies de chocolate, cravinho e canela.


These delicious cookies are the first recipe that I baked from Chetna Makan gorgeous book "The Cardamom Trail".
A book utterly divine and full of sweet and savoury recipes, all of them using different spices and nuts in it.
Chetna was a semi finalist in the 2014 edition of the Great British Bake Off and although she didn't win it, she was, all the way, one of the favourites.
These cookies are absolutely delicious and my husband and kids were very happy that I made them.
Have a go and you'll see that the chocolate and the hint of the spices, all together, elevate these cookies from "simple chocolate chips cookies" to "extraordinary chocolate chips cookies".


ingredients (makes 40):
175g unsalted butter, softened
200g dark muscovado sugar
75g caster sugar
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1 large egg
1 egg yolk
250g self raising flour
175g chocolate chips
175g pistachio nuts, roughly chopped


method:
Preheat the oven to 180ºC.
Line 2 baking trays with baking paper.
Cream the butter, sugars and spices together with an electric whisk, until light and creamy.
Mix in the egg and egg yolk.
Add the flour, chocolate chips and most of the chopped pistachio nuts. Mix to bring everything together.
Shape big tablespoonfuls of the mixture into balls and put a few of the remaining chopped pistachio nuts on top of each dough ball.
Place the dough balls on the prepared baking tray, leaving enough space between them for the cookies to spread during cooking.
Bake for 12 to 15 minutes or until the cookies start to colour but are still chewy in the middle.
Transfer to a wire rack and allow to cool completely.
The cookies will keep in an airtight container for up to 7 days.

Estes cookies deliciosos foram a primeira receita que experimentei do livro liiinnndddoooo da Chetna Makan, o "The Cardamom Trail".
Um livro lindíssimo, repleto de receitas doces e salgadas, todas elas contendo especiarias e frutos secos.
A Chetna foi semi finalista na edição de 2014 do Great British Bake Off e, embora não tenha ganho, era a favorita de toda a gente, incluindo eu!!
A prova de que ela deveria ter ganho, é este livro lindíssimo que acabou por publicar e que, além de super bem ilustrado, está muito bem planeado e repleto de receitas fabulosas.
Experimentem estes cookies magníficos que, com a adição das especiarias, são elevados de "simples cookies de chocolate", a "cookies de chocolate fabulosos"!


ingredientes (para 40 cookies):
175g manteiga sem sal, amolecida
200g açúcar mascavado escuro
75g açúcar refinado branco
1/2 colher chá de canela em pó
1/4 colher chá de cravinho em pó
1 ovo grande (L) + 1 gema de ovo
250g farinha de trigo branca com fermento
175g pepitas de chocolate
175g pistachios, picados grosseiramente
preparação:
Aquecer o forno a 180ºC e forrar 2 tabuleiros com papel vegetal.
Na taça da batedeira eléctrica, bater a manteiga com os açúcares e as especiarias, até obter uma mistura macia e cremosa.
Adicionar o ovo e a gema e bater para incorporar.
Adicionar a farinha, as pepitas de chocolate e a maior parte dos pistachios e envolver tudo muito bem.
Com uma colher de sopa, formar bolas da mistura e dispô-las nos tabuleiros, deixando espaço entre elas, para que expandam (expandem muito).
Polvilhar as bolas com os pistachios restantes e levar ao forno por cerca de 12 a 15 minutos, ou até os cookies estarem douradinhos, mas de forma a que o centro continue mole.
Retirar as cookies do forno e arrefecê-las completamente sobre uma grelha.
Estes cookies manter-se-ão frescos durante cerca de 7 dias, desde que bem acondicionados num recipiente hermético.
