Chicken katsu curry burger / Hamburger de frango com molho de caril katsu.


First of all, I start by saying sorry to the ones that try to comment on my blog but can't find the comments box.
Blogger and Google+ together are a disaster and the amount of messages I received this week from people that was complaining that they couldn't comment on my blog was a nightmare.
I didn't do any changes at all!! It's just that Blogger and Google+ combination that definitely doesn't work!!!
So, if you really want to comment, you need to click directly on the post title instead of trying to comment from the blog link. Annoying I know and I'm getting tired of this but, until I decide to change, theres nothing I can do...

Samphire, mushrooms and duck egg on toast / Tosta com salicornia, cogumelos e ovo de pato(a).


Whenever possible, I always try to publish a vegetarian suggestion on Mondays.
As you all know by now, none of us are vegetarians here at home but we like vegetarian meals whenever we fancy them.
Now that the samphire is back in season and I'm a truly assumed mushroom lover, when I saw this Rosie Birkett suggestion in the July issue of BBC Good Food magazine, I couldn't resist it and I can tell you that is truly divine.
I guess you can use good organic hen eggs if you don't want to use or don't like duck eggs but the creaminess that you get from the duck egg yolk is second to none and it really ties together the all combination.
ingredients (serves 2):
50g samphire, washed and trimmed of woody stalks
2 tbsp butter
150g mixed mushrooms, cleaned (I used a mix of Portobello, Oyster and Shiitake)
2 tbsp rapeseed oil (I used olive oil)
2 duck eggs
2 large slices sourdough (I used rye bread)
1 garlic clove, crushed
squeeze of lemon
method:
Blanch the samphire in boiling water for about 30 seconds, then drain.
Melt 1 tbsp of the butter in a frying pan.
Add the mushrooms and season.
Fry for 8 to 10 minutes or until golden crusted and reduced in size.
Heat the oil in another frying pan and fry the eggs gently for a couple of minutes.
Toast the bread until golden.
Transfer the bread to plates and keep warm.
Add the rest of the butter to the mushroom pan along with the garlic and cook for a further minute.
Toss in the samphire to warm through briefly. Season and add the lemon juice.
Top the bread with the eggs and scatter over the mushroom and samphire mixture.
Spoon over any butter from the pan and season the egg yolks.
Serve immediately.

Como já vos disse várias vezes, não somos vegetarianos, mas gostamos de refeições vegetarianas sempre que, a mim me apetece cozinhá-las e à família, apetece comê-las.
Sempre que possível e, especialmente à segunda-feira, gosto de publicar sugestões vegetarianas e hoje não é excepção.
Estando a salicornia de volta e no seu melhor e sendo eu uma amante, tanto da salicornia (podem encontrar várias sugestões com este ingrediente nos arquivos do blogue), como de cogumelos, claro que não consegui resistir a esta deliciosa sugestão da Rosie Birkett que vem na revista de Julho da revista BBC Good Food.
Costumo dizer que tudo o que seja servido em cima, ou entre fatias de pão, é comida dos Deuses e a corroborar esta minha teoria, fica esta sugestão que, mais uma vez, não decepcionou em nada.
A sugestão é feita com ovos de pato(a) mas caso não gostem ou não encontrem, acredito que com uns bons ovos de galinha caseiros, poderão obter bons resultados.
Contudo, e caso encontrem os ovos de pato, aconselho-vos a experimentar com estes ovos, pois a cremosidade das gemas de ovos de pato é extraordinária. Absolutamente fenomenal. Acreditem!


ingredientes (para 2 pessoas):
50g salicornia, lavada e talos mais grossos descartados
2 colheres sopa de manteiga
150g mistura de cogumelos, limpos (eu usei Portobello, Oyster e Shiitake)
2 colheres sopa de azeite ou óleo de canola
2 ovos de pato(a)
2 fatias grandes de sourdough ou pão tipo alentejano (eu usei um bom pão de centeio)
1 dente de alho, esmagado
umas gotas de limão
preparação:
Escaldar a salicornia em água a ferver por 30 segundos. Escorrer e reservar.
Numa frigideira larga, derreter 1 colher de sopa da manteiga.
Adicioanr os cogumelos e temperar com sal e pimenta preta a gosto.
Fritar os cogumelos por 8 a 10 minutos, ou até estes estarem caramelizados e terem reduzido de tamanho.
Numa frigideira à parte, aquecer o azeite e estrelar os ovos.
Entretanto, torrar as fatias de pão e colocá-las em pratos, mantendo-as quentes.
Adicionar o resto da manteiga aos cogumelos, juntamente com o alho e fritar por mais 1 minuto.
Adicionar a salicornia e envolver tudo muito bem, por forma a aquecer ligeiramente a salicornia, juntamente com os cogumelos.
Rectificar de sal e pimenta e adicionar umas gotas de sumo de limão.
Para servir, colocar os ovos em cima das fatias de pão e polvilhar com a mistura dos cogumelos e salicornia.
Regar com a manteiga que tenha ficado no fundo da frigideira e polvilhar as gemas de ovo com flor de sal.
Servir imediatamente.

Salted butterscotch popcorn cheesecake / Cheesecake de caramelo salgado e pipocas.



This is the recipe that I was talking about in the previous post and the one where I used the popcorn that I made.
A delicious cheesecake, from a delicious book and a fabulous dessert that is a real showstopper on the table.
It is very important that you prepare the biscuit base and the caramel sauce in advance, in order to allow both, base and sauce, to chill and cool completely.

ingredients for the cheesecake (serves 6 - 8):
200g digestive biscuits
small handful of lightly salted popcorn, plus 2 big handfuls for decoration (I used this ones)
pinch of sea salt
100g butter, melted, plus extra for greasing
500g mascarpone or soft cheese
100g quark
80g icing sugar
100ml double cream
method:
Grease a 20cm springform tin and line the base and sides with baking paper.
Put the biscuits in a food processor and grind to coarse crumbs.
Transfer to a mixing bowl and stir in a small handful of popcorn and a pinch of sea salt.
Pour the melted butter over the crumbs. Mix everything together with a fork and put the mixture in the baking tin, spreading them out evenly and pressing down until packed and level.
Put the tin in the fridge to cool.
Put the mascarpone, quark and icing sugar in a bowl and beat it together.
Mix until its well combined and thickening, then add the cream and continue to mix.
You should be thick but not over whipped. Be very careful as the mixture can curdle very easily.
Pour in about half of the cooled butterscotch sauce and fold it through the cream mixture in order to create a ripple effect.
Taste and add more sauce or salt if necessary.
Pile the mixture on top of the biscuit base and smooth it down with a palette knife.
Cover with cling film and chill for at least 2 hours.


for the butterscotch sauce:
30g unsalted butter, diced
1 tsp milk
160ml double cream
145g light muscovado sugar
generous pinch of salt
method:
Melt the butter, milk, cream, sugar and salt in a medium saucepan and stirring continuously, bring to the boil. Turn down to a simmer and cook for 10 minutes, stirring occasionally.
Remove from the heat and set to one side. If when cool, the mixture is too stiff, warm it up over the heat with a splash of milk to loosen.
to finish: When ready to serve, top the cheesecake with about 2 big handfuls of popcorn and drizzle with the remaining butterscotch sauce.

Aqui está a receita de que falava no post anterior e onde utilizei as fantásticas pipocas com caramelo e especiarias.
Um cheesecake delicioso, receita retirada de um livro não menos delicioso e que, embora simples, faz um vistão à mesa.
Atenção! É muito importante que comecem por preparar primeiro o molho de caramelo e a base do cheesecake, para que ambos tenham tempo de arrefecer completamente, antes de prosseguir com o recheio.


ingredientes para o cheesecake (para 6 a 8 pessoas):
200g bolachas digestivas
um pequeno punhado de pipocas ligeiramente salgadas
uma pitada de flor de sal
100g manteiga derretida + extra para untar a forma
500g queijo mascarpone ou queijo creme
100g quark
80g açúcar em pó
100ml natas para bater
preparação:
Untar uma forma de fundo amovível com 20cm de diâmetro e forrar a base e os lados com papel vegetal.
Colocar as bolachas no robot de cozinha e processar até estarem grosseiramente desfeitas.
Colocar as migalhas de bolacha numa taça, juntar-lhe o punhado das pipocas e uma pitada de flor de sal e misturar.
Deitar a manteiga derretida sobre a mistura das bolachas e misturar tudo muito bem.
Colocar a mistura dentro da forma e pressionar bem contra o fundo da forma, alisando e prensando, por forma a obter uma camada uniforme, bem prensada e lisinha. Colocar a forma no frigorífico.
Numa taça, colocar o mascarpone, o quark e o açúcar em pó e bater tudo, até que a mistura esteja bem combinada e comece a engrossar.
Adicionar as natas e continuar a bater. Atenção para não bater demais. A mistura deve ficar espessa, mas não batida em demasia. Muito cuidado neste passo, pois a mistura pode talhar.
Deitar metade do molho de caramelo na mistura das natas e misturar delicadamente, por forma a obter um efeito marmoreado.
Provar a mistura e, se achar necessário, adicionar mais molho e mais uma pitada de sal.
Deitar a mistura sobre a base de bolacha e alisar bem a superfície.
Cobrir com película aderente e refrigerar por cerca de 2 horas, ou até estar firme.


para o molho de caramelo:
30g manteiga sem sal, em cubos
1 colher chá de leite
160ml natas para bater
145g açúcar mascavado claro
uma boa pitada de sal
preparação:
Num tacho, derreter a manteiga, com o leite, as natas, o açúcar e o sal, mexendo sempre.
Deixar levantar fervura, baixar o lume e cozinhar por cerca de 10 minutos, mexendo de vez em quando.
retirar o tacho do lume e reservar.
Quando frio, se o molho estiver muito espesso, aquecê-lo, juntando-lhe um bocadinho de leite, por forma a torná-lo menos espesso. O molho deve ter uma consistência por forma a poder ser regado.
para decorar:
2 bons punhados de pipocas ligeiramente salgadas (eu usei as desta receita)
para finalizar o cheesecake:
No momento de servir, cobrir o cheesecake com as pipocas e regar com o resto do molho.

Parsley, bacon and broad bean risotto / Risotto de salsa, bacon e favas.


With this recipe I closed the Winter season risottos and with today's one, I'm opening the Spring season risottos.
The combinations in this dish are just amazing and the addition of the broad beans, a very springy ingredient, makes it extraordinary.
ingredients (serves 4 as a starter or 2 as a main course):
150g shelled fresh or frozen broad beans
50g spinach leaves
60g flat leaf parsley leaves
3 tbsp olive oil, plus extra for frying
10g butter
4 slices smoked streaky bacon, cut into lardons
1 onion, finely chopped
salt
freshly ground black pepper
1 spring thyme, leaves picked
1 large garlic clove, finely chopped
150g arborio rice
75ml dry white wine
750ml warm chicken stock
20g grated parmesan
1 tbsp lemon juice, freshly squeezed
method:
Blanch the broad beans in a pan of boiling salted water until al dente.
Remove with a slotted spoon to a bowl of iced water and peel them if the skins are too tough.
Using the same boiling water, blanch the spinach and parsley leaves until wilted.
Remove from the pan with a slotted spoon, leave to cool and squeeze out the excess water.
Put the spinach and parsley in a food processor with 2 tbsp of the olive oil and 1 tsp of water and blitz to a fine purée. Set aside.
Heat the remaining oil and half of the butter in a large frying pan and fry the bacon until it starts crisping up.
Remove the bacon with a slotted spoon and drain over kitchen paper.
Add the onion to the same pan with a good grind of black pepper and the thyme and cook over a medium heat until soften but not coloured.
Add the garlic and stir.
Add more olive oil if necessary and then add the rice, stirring to coat it in the oil and cook for a couple of minutes, until it turns translucent.
Pour in the white wine, stir to incorporate and cook for 2 minutes or until it has evaporated.
Start adding the stock, one ladleful at a time, stirring well between each addition, adding the next ladleful only when the previous one has been absorbed.
Continue this process until the rice is cooked but still a little al dente.
Take the pan off the heat and stir in the parmesan and remaining butter.
Add the spinach and parsley purée, stirring throughly to incorporate it well with the rice.
Stir through the bacon, broad beans and lemon juice and season to taste.
Serve immediately.

Se com esta receita dei por encerrada a época dos risottos de Inverno, com a que hoje vos trago, considero aberta a época dos risottos de Primavera.
A combinação de ingredientes é genialmente deliciosa e a adição das favas, um ingrediente primaveril, eleva-o de banal a extraordinário.
ingredientes (para 4 pessoas como entrada, ou para 2 pessoas como prato principal):
150g favas, frescas ou congeladas, descascadas
50g folhas de espinafre
60g folhas de salsa
3 colheres sopa de azeite
10g manteiga
4 fatias de bacon fumado, em lardons
1 cebola, picada finamente
sal e pimenta preta moída na altura
folhas de 1 haste de tomilho fresco
1dente de alho grande, picado finamente
150g arroz para risotto
75ml vinho branco seco
750ml caldo de galinha, mantido quente
20g parmesão ralado
1 colher sopa de sumo de limão
preparação:
Numa panela de água a ferver com sal, escaldar as favas até estas estarem al dente.
Retirar as favas da panela com uma escumadeira e refrescá-las em água gelada.
Se a pele das favas for muito rijas, retirar-lhes a pele.
Na mesma água a ferver, escaldar os espinafres e a salsa, até estes murcharem. Retirar da água com a escumadeira, deixar arrefecer um pouco e espremer bem a fim de lhes retirar o excesso de água.
Colocar os espinafres e a salsa no copo de um robot de cozinha, juntamente com 2 colheres sopa de azeite e 1 colher chá de água e reduzir a puré. Reservar.
Aquecer o restante azeite e metade da manteiga num tacho largo ou frigideira e fritar o bacon até este estar crocante. Retirar com uma escumadeira e escorrer em cima de papel absorvente de cozinha.
No mesmo tacho e à mesma gordura onde fritou o bacon, adicionar a cebola, as folhas de tomilho e uma boa pitada de pimenta preta e cozinhar até a cebola estar macia mas sem cor.
Adicionar o alho e mexer. Se necessário, adicionar mais um bocadinho de azeite.
Adicionar o arroz e mexer bem, envolvendo o arroz na gordura, até este estar opaco.
Deitar o vinho banco no tacho e deixar evaporar, mexendo sempre.
Adicionar o caldo, uma concha de cada vez, mexendo sempre e só adicionando a concha de caldo seguinte, quando a anterior tiver sido completamente absorvida.
Quando o arroz estiver cozido, mas al dente, desligar o lume, adicionar o parmesão e a manteiga restante e misturar bem.
Adicionar o puré de espinafres e salsa e mexer bem, para que fique bem incorporado.
Adicionar o bacon, as favas, o sumo do limão e rectificar de sal e pimenta.
Servir de imediato.

Chicken, mushroom and tarragon cassoulet / Cassoulet de frango, cogumelos e estragão.


Depending on which part of the world you're reading this post, some of you might be thinking that this meal is more of a Winter than a Spring or Summer meal but here, in Scotland, believe me, with temperatures of 11 or 12º degrees Celsius most of the time, we still need some comforting dishes instead of light meals and springy or summery salads.
This recipe is from my new book "A lot on her plate".
It requires a bit of time in the kitchen but it's so delicious and full of flavour that you'll end up thinking that it was worthy of every minute you spent preparing it.
I used a mix of different varieties of mushrooms but I leave you the original quantities called in the recipe.
ingredients (serves 4):
1 large handful of cherry tomatoes, halved
extra virgin olive oil
sea salt and freshly ground black pepper
25g butter
1 garlic clove, crushed
3 small shallots, finely chopped
handful of fresh tarragon, chopped, plus extra to garnish
100g chanterelles, little ones whole and bigger ones broken up
2 large portobello mushrooms, cleaned and sliced
50g chestnut or button mushrooms, cleaned and halved
bunch of parsley, finely chopped
1 to 2 tsp white wine vinegar or tarragon vinegar
8 free range chicken thighs, skin on (I used a mix of thighs and drumsticks)
150ml white wine
80g kalamata olives, pitted and sliced
500 to 700ml chicken stock or water
400g tin cannellini beans, drained and rinsed
method:
Preheat the oven to 180ºC.
Place the tomatoes in a roasting tin, coat them with 1 tbsp of olive oil, season with salt and pepper and roast for 15 to 20 minutes, until they're aromatic.
Meanwhile, heat a large frying pan and add the butter, garlic and half of the shallots and cook for about 2 minutes or until they start to soften.
Add the tarragon, mushrooms a pinch of salt and a grind of pepper and sauté for 5 minutos, or until the mushrooms are tinged golden brown.
Transfer the mixture to a bowl and stir in the chopped parsley and the vinegar to taste.
Using the same pan, heat 1 tbsp of olive oil over medium high heat. Add the chicken, first with the skin side down and fry until golden brown on both sides. Transfer the chicken to a plate and set aside.
Add the remaining shallots to the pan and fry for 4 minutes, or until soft.
Deglaze the pan with the white wine and place the chicken back in the pan.
Add the olives and pour in stock or water until it covers the chicken.
Bring to the boil. Turn down the heat and simmer for 35 minutes.
Add the roasted tomatoes and stir, then add the beans.
After 5 minutes, add the mushrooms and simmer for 7 to 10 minutes, or until the sauce has reduced and gone a bit creamy from the beans.
Garnish with tarragon leaves and serve.

Dependendo da zona do globo em que estejam a ler este post, muitos de vós poderá estar a pensar neste momento que esta receita, é mais para o Outono/Inverno, que propriamente para a Primavera/Verão que se faz sentir em alguns países.
Pois acreditem que por aqui, com os 11 a 12º centígrados que ainda se fazem sentir a maior parte dos dias, saladinhas e comidinhas leves de Verão, ainda não é algo que apeteça muito...
Esta é a primeira receita a sair do meu novo livro "A lot on her plate" e garanto-vos que vale a pena, pois tanto de sabor, como de aroma, é absolutamente magnífica!
A preparação requer umas horitas na cozinha, mas nada de complicado e que não seja prazenteiro para quem gosta de cozinhar.
A receita original pede as quantidades e variedades de cogumelos que abaixo transcrevo, mas eu usei o mesmo peso numa mistura de várias variedades dos mesmos.


ingredientes (para 4 pessoas):
1 bom punhado de tomates cereja, cortados ao meio
azeite extra virgem
sal e pimenta preta moída na altura
25g manteiga
1 dente de alho, esmagado
3 chalotas pequenas, finamente picadas
um punhado de folhas de estragão fresco, picadas + extra para decorar
100g cogumelos chanterelles, os pequenos inteiros e os maiores esfarripados
2 cogumelos portobello grandes, limpos e fatiados
50g brancos ou castanhos, lavados e cortados ao meio
um punhado de salsa, picada
1 a 2 chá de vinagre de vinho branco ou vinagre de estragão
8 sobre coxas de frango, de preferência frango do campo (eu usei coxas e sobre coxas)
150ml vinho branco
80g azeitonas kalamata olives, sem caroço e picadas
500 a 700ml caldo de galinha ou água
1 lata de 400g de feijão branco, escorrido e passado por água
preparação:
Aquecer o forno a 180ºC.
Colocar os tomates num tabuleiro, regar com 1 colher sopa de azeite e temperar de sal e pimenta.
Levar os tomates ao forno por 15 a 20 minutos, ou até estarem assados e aromáticos.
Entretanto, aquecer uma frigideira grande. Adicionar a manteiga, o alho e metade das chalotas.
Cozinhar por 2 minutos, ou até as chalotas estarem macias.
Adicionar o estragão, os cogumelos, uma pitada de sal e pimenta e saltear por 5 minutos, ou até os cogumelos estarem coradinhos.
Transferir a mistura para uma taça, adicionar a salsa picada e 1 ou 2 colheres de chá de vinagre, consoante o vosso gosto. Reservar.
Na mesma frigideira onde se saltarem os cogumelos, aquecer 1 colher sopa de azeite sobre lume médio a alto.
Fritar o frango, primeiro com o lado da pele virado para baixo, até que esteja douradinho de ambos os lados. Transferir o frango para um prato e reservar.
Colocar as restantes chalotas na frigideira e fritar por 4 minutos, ou até estarem macias.
Adicionar o vinho branco e com uma espátula, raspar bem os resíduos do fundo da frigideira.
Voltar a colocar o frango na frigideira e adicionar as azeitonas e caldo de galinha ou a água suficiente, por forma a cobrir o frango.
Deixar levantar fervura, baixar o lume e cozinhar por cerca de 35 minutos.
Adicionar os tomates assados ao frango e mexer. Em seguida, adicionar o feijão.
Após 5 minutos, adicionar os cogumelos e cozinhar por cerca de 7 a 10 minutos, ou até o molho ter reduzido e estar ligeiramente cremoso devido à goma do feijão.
Decorar com folhas frescas de estragão e servir.
