Pita sandwiches to die for, soup, squash and spice cake!
God this was so good. Hummus, olive tapenade, avocado and tomato in a pita.
Another sandwich, this time with pico de gallo instead of plain tomato. Just as delicious.
VWAV split pea soup never disappoints.
Beautiful baby squashes with shaved brussels, roasted.
Spice cake from a box made with canned pumpkin and topped with cinnamon bun frosting.

The Making of a Perfect Sandwich.
My favorite sandwich: hummus, avocado, chili jam and salad greens on toasted bread, seasoned with lime juice (or lemon), salt and pepper.
Be generous with the hummus and avocado. It's so worth it. Got the idea from Mary McCartney's book. I love that book.

Amazing Sandwich.
I have Mary McCartney's book FOOD to thank for this taste combination in a sandwich: hummus, avocado, lemon juice, chili jam (or sweet chili sauce if you can't find chili jam) and salad greens (spinach in this case) on seeded bread. Amazing flavor!

Salads and CAKE.
Amazing salad with mixed greens, big chunks of avocado and leftover chili covered in vegan "thousand island" dressing.
Arugula and couscous salad with orange bell peppers, spinach, scallions, tomato and garlic, tossed in a lemon, white wine, dijon vinaigrette.
My oven wasn't working for about a month and now that it's fixed, I made a cake! A basic yellow cake recipe from "The Complete Vegan Kitchen" and lemon glaze.
I was so waiting for this moment to arrive. Cake is my one true weakness.

A Good Sandwich.
As you know from past blog posts, I love sandwiches. Sometimes you get lazy and home made sandwiches can be pretty boring but when you put a little effort into it with different breads and good ingredients, they are delicious. Last night I made this sandwich for dinner on russian rye. It has avocado, red bell pepper, cucumber, vegan cashew based cheese (that I made a while ago), sprouts, tomato and vegenaise. I squeezed some lemon and sprinkled salt and pepper. My brother and I shared it. So good!

Bean Tostada and a Grain Bowl.
Today's lunch was a delicious tostada that had refried black beans, corn, sauteed garlic kale and potatoes and avocado.
I also prepared a grain bowl for my lunch tomorrow. Quinoa, spinach, sauteed tofu, yellow tomatoes, sweet potato, cranberries and miso tahini dressing.

A.A.T. Sandwich and Linda McCartney's Tuscan Bean and Cabbage Soup
This is seriously an amazing sandwich. Take two slices of Ezekiel sprouted grain bread, pop them in the toaster to brown. In the meantime, take a handful of arugula and toss with a little lemon juice and olive oil. Sprinkle with salt and pepper. When toast is done, spread some Vegenaise on both. Top one with the arugula salad, sliced avocado and the other with sliced tomato. Sprinkle both sides with salt and pepper. Close sandwich and eat. Trust me, it's good!
This soup recipe I got from Linda McCartney's book "Linda's Kitchen". It's an adapted version of her Tuscan Bean and Cabbage Soup. I did everything as written but added zucchini, potatoes, summer savory and a touch of mellow red miso paste.

Seedy Corn-Tomato-Avocado Salad
Got this recipe from my coworker who got it from a book called Going Raw. This was such a good salad with the creaminess from the avocado, the juicy tomatoes, zesty lime juice and crunchy pumpkin seeds. I also ate this on top of whole grain wasa crackers. Was so good!

Fried Rice and Avocado Pesto Pasta
I whipped up this fried rice from last night's brown rice, the leftover veggies, added some broccoli, tofu, onions, garlic, ginger, mushroom soy sauce and ketchup. Threw it all into the wok on high and dinner was ready in minutes.
I made this dish over the weekend which was inspired by Giada DeLaurentis' avocado and arugula pesto. I made mine with less arugula, more basil and instead of parmesan, I used almonds and miso paste.

Sansho Spice Tofu Salad
Made a quick salad for lunch today. I sauteed cubed tofu with olive oil, lemon, salt and a Sansho spice blend which has red chili, seaweed, sansho pepper, orange peel, poppy seeds, white and black sesame seeds. Sansho pepper is the same as Sichuan pepper. I let the tofu cool a bit and then served it on a salad mix with avocado and cucumber. I dressed it simply with a sesame oil/miso/rice vinegar dressing. Fresh and delicious!

Avocado Sandwich & Xmas Cookies
Avocado, tomato and Daiya cheese sandwich. Been living on these sandwiches the past few days. We got several giant avocados that had to be eaten asap! They were delicious.
I made these cookies for christmas: chocolate chip, white chocolate and rainbow chip plus pumpkin oatmeal raisin.
My boss made me these cute christmas tree cookies that were creatively dyed green with liquid chlorophyll! They were so soft and sweet. There were more but I ate most of them on the way home from work yesterday!
We spent xmas eve with our dear friends/neighbors and watched National Lampoon's Christmas vacation. My omnivore neighbor surprised me by making these vegan chocolate chip mint cookies! She went all the way and used spelt flour, agave syrup and grain sweetened chocolate chips. They were gorgeous and so yummy!
Dozen after dozen, I saw these come out of the oven. They are so beautiful.
Here's my neighbor holding up a plate of her first ever vegan homemade cookies! I was so touched that she made these for me. She said vegan baking was easy! :)
