Soup and Wine.

Made a perfect veggie soup and dumplings today. I've been out of sorts lately and needed some comfort food. The soup is just my "fricot" recipe which I omitted tofu and added broccoli. I love dumplings in a soup!

Restorative wine. Enough said.

Soup and Dumplings + East Coast Coffee Cake

This is the fricot soup that I make often with the most perfect dumplings. I love this soup so much. It's perfect with or without tofu.

This is the East Coast Coffee Cake from Vegan Brunch cookbook. I made it with the jam swirl in which I used organic Trader Joe's "Superfruits" jam.

I love that crumb topping!

VeganMoFo: Navajo Stew and Dumplings

I have been so lazy for MoFo it's not even funny! There were a few dishes I opted out of blogging about because they were disgusting (the blandest rice casserole on the planet) and a few that I felt were too ordinary (beans on toast?). So today I was determined to make something new that I have never tried before. I veganized a navajo stew recipe from a southwest indian cookbook and instead of using mutton or whatever it was, I added extra vegetables and black beans. I also gave it a kick with chipotle chili powder. This stew is very rich and flavorful and the cornmeal dumplings were a nice touch. It is also good on top of plain rice.

Autumn Chowder with Dumplings

Ah Friday... I've had a looooong week! I'm so happy it's the weekend. Still feeling a little "off" so I'm still in soup mode. I made this delicious Autumn Chowder that I got from the all-creatures recipe site. So comfort foody and hearty! I added summer savory, white miso, a drop of liquid smoke and dumplings! Dumpling are becoming my favorite thing to plop into soup!

Fricot n Dumplings

Been feeling under the weather since yesterday and thought soup might be a good cure. I made my vegan fricot recipe without the tofu and added dumplings instead. Dumpling recipe here.

Chunky Veggie Soup 'n Spelt Dumplings

I had some produce to use up so I made this easy and comforting soup! The dumplings were an afterthought and I'm glad I made them. Extra comfort food-iness!

2 TB Earth Balance margarine
1/2 tsp. Vegemite (optional)
2 onions, cut into chunks
3 large carrots, chopped
3 cloves garlic, minced
1 tomato, cut into chunks
2 ribs of celery, sliced
3 small yellow potatoes, peeled and cubed
1 small broccoli crown, seperated into florets
4 -1" slices of firm or extra firm tofu
water or veggie broth
1 TB olive oil
1 tsp white miso
1 TB summer savory
1/2 tsp poultry seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1 TB soy sauce
2 TB cornstarch mixed with 2 TB water
salt and pepper to taste

For Dumplings:
1 cup flour (all purpose or white spelt)
2 tsp. baking powder
1/4 tsp. salt
1/3 cup plain rice, almond or soy milk

Heat margarine in a soup pot. Add Vegemite and stir around to let it dissolve with the margarine. Saute onions and garlic briefly then add all veggies and water to cover. Bring to a boil and add olive oil, miso, dried herbs/spices, soy sauce and cornstarch mixture. Lower heat and let simmer until veggies are tender.

Meanwhile saute slices of tofu in olive oil with salt and pepper until browned on both sides. Cut into cubes and set aside.

Prepare dumpling dough:
Mix flour, baking powder and salt in a bowl. Add rice milk and stir until dough forms. Add a little more rice milk if too dry.

When veggies are tender add tofu and bring soup back to a boil. Season with salt and black pepper. Add balls of dough by the teaspoon on top of the boiling broth. Cover and let boil for 5 minutes. Dough will double in size.

Split Pea Soup w/ Baking Powder Dumplings

I pureed last night's soup and made these baking powder dumplings from a recipe I got from the coolest little cookbook I found at the library's "Free" table. Turns out it was published sometime in the late 1920's. There are hardly any vegan recipes in it but I think I can work with them to make them animal free. The dumplings recipe only needed rice milk to switch out for the milk. They came out fluffy and soft, perfect with the hot and creamy soup!

Want Some Dim Sum?

Dim sum is like the greatest thing ever. It's like a chinese version of tapas, an array of light dishes which can make an excellent dinner. Dim sum may include something like what I made tonight: yummy dumplings of steamed dough with a tasty filling and dipping sauce. One year on my birthday back in my omni days, my friend and cousins took me to a local dim sum restaurant. It was so fun getting to choose which dishes we wanted from shu mai to steamed buns and dumplings of all kinds. Unfortunately a veggie dim sum place is nowhere to be found here in Los Angeles, at least not to my knowledge. Tonight's dinner featured only one dish of tofu and veggie potstickers with a homemade sweet and sour sauce served with coleslaw. If it was the weekend, I would have made a few more dishes to heighten the dim sum experience. But just having these and salad was completely satisfying.

Recipe for potstickers here. (This time I steamed them in a steamer basket instead of pan frying first!)

Marble Loaf Cake + Ku Chai Dumplings!

Last night my husband and I went to Baja Fresh for dinner. After dinner which was really good and filling by the way (I had a burrito mexicano bowl), my husband wanted to go to Best Buy which was next door. I hate Best Buy so I ducked into nearby Ralph's supermarket while he shopped. I wandered the bakery section drooling over the cookies, cakes, turnovers and pies. I was mad that I couldn't have any as they all contained dairy and eggs. One that caught my eye especially was a marble loaf cake. I used to make marble cakes as a kid with prepared cake mixes. They were lovely. I was determined to make one this weekend, vegan style. I used kittee's vanilla cake recipe again (I used rice milk for the liquid), portioned out 1/4 of the batter and mixed in some cocoa powder to get the chocolate part of the cake. I poured the vanilla batter into the loaf tin and poured big dollops of chocolate batter in random areas on top of the vanilla batter, then took a butter knife and swirled it through cake a couple of times. About 50 minutes later, I had my very own marble loaf cake!

Moist and delicious. And you can bet that I'll be having this with tea later on. Next time I will use a higher proportion of chocolate to vanilla in the batter.

Went to Bangkok Market in Hollywood yesterday and picked up these babies. They are located in the freezers. You only need to defrost them and either pan fry or steam them. Ingredients: Chinese leek leaf, tapioca flour, salt, sugar, palm oil.

Served with low sodium soy sauce mixed with Sriracha hot sauce.

All together with tea and dessert!

Edited to add: Just found this recipe online to make these dumplings at home:
