Pizza and gingerbread.

Picked this up on sale. 

It was ok. Loved the cheese but I'm not a fan of the gluten free crust. Wish they made them with regular crust.

First time trying this. Used 3 TB chickpea water for 1 egg. 

Didn't rise much at all but very moist. Taste wise, I thought it was too over the top with the ginger, a little too strong and almost bitter? I like gingerbread a little more subtle than this.

Got the ornaments out to decorate the tree.

Sunday taco lunch.

On the left, Refried beans and on the right, chipotle lentils. I just cooked some brown lentils up, drained them and then cooked them with onions, peppers, chipotle taco seasoning and tomato paste. Yummy!

All dressed taco topped with lettuce, fresh tomatoes, Daiya cheddar, fresh salsa, Tofutti sour cream and Cholula hot sauce.

Tater Tot Casserole

Made the recipe from The Snarky Vegan blog. I added mushrooms, onions and Gardein veggie crumbles to the cream sauce and a little Daiya cheese to the frozen veg mix. Came out great! Next time I will up the sauce.

A little taster. Delicious! Kind of like eating shepherd 's pie. So good and comforting. I love the crispy tater tots on top.

Easy food on Labor Day.

Taking it easy, nothing fancy at all. I made tofu scramble and vegi sausage for breakfast and finished my last donut. Lunch was homemade hummus with tomato salad, Daiya cheese and crostini.

Grilled Melty Sandwich!

Yesterday I came across this video on youtube and was mesmerized. I decided I was going to make a gooey melty sandwich for myself on the weekend. Went out to the store and got some good rye bread, Daiya cheese and roasted peppers. I made some caramelized onions first and then layered it all up and grilled it in my pan. It was so yummy. I served it with ginger sesame coleslaw.

Lentil Chili and Cheddar Garlic Beer Bread!


Cheddar garlic beer bread! I found this recipe at the Daiya website and I printed it out. I don't think it's on the site anymore but I posted a pic of the recipe at the bottom of this post.

It's tender and chewy and really flavorful! I added a clove of crushed garlic to the recipe for more flavor.

Yummy Sandwiches and Chocolate Topped Energy Bars!




I was in the mood for a gigantic sandwich today and I envisioned a turkey, cheese avocado and slaw sandwich. I think I succeeded. I used Tofurky and Daiya products.

The slaw is a combination of kale, cabbage, red onion, carrot with a creamy Vegenaise based dressing with mustard.
BBQ pulled " pork" made with soy tvp chunks. I wanted to use jackfruit but didn't have any. This was great with the kale slaw!
Served on toasted white bread.



These are the usual energy bars I make but this time I had slightly less peanut butter than the recipe called for so the mixture seemed a little drier to me. The remedy for that was to add a layer of dark chocolate on top that I melted with coconut oil. Worked great!

The bottom layer is toasted oats, sunflower, pumpkin and chia seeds, almonds, chocolate chips, dried cranberries and apricots. This is all mixed with melted peanut butter and agave. I pressed the mixture into a pan and chilled for a couple hours. Then topped it with the melted chocolate and chilled overnight.

Dinner a movie. A brand of fake chicken I found at Target. I think it was called Simply Balanced or something. The frozen chicken strips looked weird but once you cook it up and add the teriyaki sauce, it looked nice and tasted nice too!


Another dinner and a movie. BBQ Chicken sandwich made with Boca Chicken burger with bbq sauce and homemade coleslaw.


Good vegan snack or otherwise known as meal in a bag. I can eat this all in one go.

More vegan snacks that are too good to only have one.


Carla's Vegetarian sandwich at Bossa Nova without the goat cheese spread. Was delish.


Comforting mac n cheese made with leftover sausage gravy and Daiya.

Broccoli Rice Casserole, Garlic Cheesy Bread and Mocha Blueberry Cake.


Last week I made this broccoli rice casserole following one of those old Campbell's recipes. Instead of cream of mushroom soup, I used Imagine portobello mushroom soup. It was good. Next time I'll add more soup and more salt.


Saw this pull apart cheesebread recipe going around that I had to make vegan. You basically melt Earth Balance, add garlic and scallions. Then you pour this mixture into the crevices of your cut up bread loaf. Wrap it in foil and bake for 10 minutes at 350 F. Then unwrap and fill with cheese, then bake for another 15 minutes unwrapped at about 400 F.


It's totally doable!


Delicious and so bad for you! I probably ate most of it on my own. The guilt!


And for weekend dessert, mocha blueberry cake! I used this recipe. I used blueberry instead of plain yogurt so mine had a hint of blueberry flavor.


It is intensely coffee flavored. The dark chocolate drizzle is a must to balance out the strong coffee.

Sandwich stuff and Baja Fresh.


Picked up some ingredients for sandwiches this week. I never tried the Tofurky tempeh before. So convenient! I usually make my own tempeh bacon.


Tempeh bacon, Avocado, Lettuce and Tomato sandwich on Dill rye. YUM.


Went to Baja Fresh yesterday. Easy vegan meal and cheap too. The beans and rice plate (no cheese) with a side of corn tortillas, guac and pico de gallo!
