Hotpot.


Finally made the Winter Warmer Hotpot recipe by Mary McCartney. Very satisfying and tasty, alone or on top of rice. My herbs of choice were summer savory and rosemary/thyme. I also used veggie crumbles instead of veggie burger chunks. I forgot to add cornstarch to the veggie broth so mine came out like a soup but still good!

Tater Tot Casserole

Made the recipe from The Snarky Vegan blog. I added mushrooms, onions and Gardein veggie crumbles to the cream sauce and a little Daiya cheese to the frozen veg mix. Came out great! Next time I will up the sauce.

Enchilada Chili Casserole.



For the filling, I made a pinto bean and sweet potato chili with zucchini and peppers. I let it thicken up before making this casserole. I layered corn tortillas with the filling, red chili sauce, enchilada sauce, Daiya cheddar and topped with more sauce, blobs of Vegenaise, more Daiya and olives.


Also made a side of mexican rice. Yummy!

Enchilada Casserole and Pumpkin Pie Scones.


I was craving mexican flavors the other day so I decided to make this for the weekend. The filling is mixed vegetables, whatever was in the fridge (onion, brussels sprouts, carrot, corn, edamame, green beans), black beans, diced tomatoes and gardein crumbles with spices (cumin, chili powder, oregano, paprika, salt, onion powder). Then I layered corn tortillas with the filling and topped with El Pato tomato sauce, Daiya cheese, vegenaise blobs and olives.


Topped with Cholula green sauce!


Got these at Target. They are vegan and you only need vegan butter and vegan milk to make it. I used Earth Balance and almond milk.


Came out really nice.


Perfect with coffee. The glaze was nice but a little too much clove I think. The scones were very nice and tender.

Enchilada Casserole & Date-Raisin Muffins.


My go to enchilada casserole. I normally use quinoa but goddamn, is quinoa getting expensive or what? I used couscous instead today. Came out great! Pretty much just sauteed onions, celery, peppers and garlic with herbs and spices (cumin, oregano, chili powder, cayenne), then added a can of diced tomatoes, 1 can of black beans, chopped zucchini and asparagus. After the veggies were tender, I added cooked couscous (1/2 cup dry) and mixed it all together. Then I layered the mixture with flour tortillas and tomato sauce in a baking dish, then topped with more tomato sauce, Daiya cheese and vegenaise. I used El Pato tomato sauce which is spicy. Then I baked it at 350 F for 45 minutes.


Topped with guacamole and fresh salsa.

Date and Raisin muffins. The raisins are in there somewhere. The dates are in the puree. I used this no sugar, fruit sweeteened muffin recipe. I chickened out and added a little bit of sugar to the batter. I also added a handful of 10 grain cereal, a bit of blackstrap molasses and sultanas. I'm still on the lookout for a vegan sticky bran muffin recipe. I wanted something like that today but didn't have any bran lying around.

Creamy tomato soup & grilled cheese, salad w/ homemade croutons, gluten free cake and another casserole.


It's supposed to rain all weekend, so I made an all American favorite: tomato soup paired with a grilled cheese sandwich. So comforting and delicious! I loosely followed Mary McCartney's "Must Have Creamy Tomato Soup" (subbing almond milk for the soy creamer) and made the sandwich using pepper jack and mozzarella Daiya vegan cheese. Yummy yummy yummy yummy....


A simple salad with mixed greens, homemade croutons (made from Ezekiel bread) and one of the most delicious salad dressings ever. It's the Caesar dressing recipe from The Ultimate Uncheese Cookbook. Make it now! Recipe for the dressing below. For the croutons, just toss bread cubes with olive oil and garlic powder and italian herbs and toast in a 400 degree F oven for 15 minutes, stirring 1/2 way.


Gluten-free chocolate cake loaded with candy sprinkles.


I made this casserole last week. It's the usual quinoa, black beans and Daiya cheese tortillas casserole. I love it so much.

Caesar Dressing (Adapted from The Ultimate Uncheese Cookbook by Jo Stepaniak)

3 TB nutritional yeast flakes
2 TB tahini
2 TB Dijon mustard (use whole grain mustard!)
1/2 tsp crushed garlic
1/3 cup water
3 TB lemon juice
1 TB red wine vinegar (she used balsamic)
2 TB Vegenaise (my addition!)
Whisk all ingredients together and chill. If too thick add a little more water.

Cheezy Enchilada Casserole & Lemon Loaf Cake


My love for casseroles will never die. Today I made an adapted version of Bob Barker's vegan enchilada casserole which you can find here. I forgot to top it with Fritos at the end, bah! But it's ok it was still amazing. I used black and pinto beans along with a package of veggie ground from Helen's Kitchen. I also added a lot of sauteed peppers and onions. And for the cheese, I used Pepper Jack Daiya vegan shreds.


So good with homemade guacamole.


And a dessert to celebrate the weekend: lemon scented vanilla cake with lemon icing. This cake recipe uses olive oil which I find makes cakes very very moist.

Vanilla Lemon Loaf Cake
1-1/2 cups flour
1 cup unrefined sugar
1 tsp baking soda
1/2 tsp salt
1 cup almond milk
1/3 cup regular olive oil
1 TB grated lemon zest
1 TB cider vinegar
1 tsp vanilla

Preheat oven to 350F. Grease a loaf pan with oil. Sift dry ingredients into a bowl. Add wet ingredients and mix until smooth. Pour into greased loaf pan and bake about 30-35 minutes or until toothpick test comes out clean. Let it cool for 5-10 minutes. Poke holes in cake with a wooden skewer. Make icing and pour over cake.
Lemon Icing
1/2 to 1 cup powdered sugar
2-4 TB lemon juice
Mix until smooth and thick, but pourable. You may add more sugar or lemon juice until you get the right consistency.

Pizza Casserole.


It's called 'pizza' because it has components of pizza flavors. It's fun spiral pasta layered with tofu-cashew ricotta, pizza sauce, italian herbs, capers, veggie ground "beef" (flavored with fennel, sage and crushed red pepper flakes), green peppers, onions, black olives, kale and zucchini. It was super good and if you know me, I love a good casserole. This will last the rest of the week.

Weekend Cooking: Eggplant and Herb Casserole & Potato Dauphinoise, vegan style.


I love weekends because I have time to labor over special recipes and enjoy a plate of home cooked food in the comfort of my home. Today I brought out two books: Linda's Kitchen by Linda McCartney and River Cottage Veg by Hugh Fearnley-Whittingstall. Two great veggie cookbooks that I love dearly. I just got the second book for xmas and the Linda McCartney I found several years ago at a used book shop in a first edition hardcover with plastic slipcover. I was very pleased to find that one.


First up I made the Eggplant and Herb casserole from Linda's book. Layers of fried eggplant in a flavorful herbed tomato sauce with melty cheese. The recipe called for mozzarella. I used Daiya vegan shreds which worked great and gave the casserole a wonderful cheesy texture along with the silky eggplant. I also added sliced mushrooms in the layers. Really good and satisfying dish but very time consuming because of all the eggplant frying! I'd make it again though. You can find the recipe here. The recipe was originally published in this New York Times article from 1994. It's a great read by the way. I love the description of Paul hovering in the background (guitar in hand) waiting to eat!


This beautiful Potato Dauphinoise recipe is from River Cottage Veg cookbook. I didn't peel my potatoes because I'm lazy but I really should the next time I make this. It calls for heavy cream but I used full fat unsweetened soymilk instead. I probably could have used soy creamer but I didn't have any. I used A LOT of Earth Balance margarine to butter up the baking dish and added little knobs of it throughout the layers. Who doesn't love creamy, buttery baked potatoes? I loved this dish. It went very well with the eggplant casserole.

Thanksgiving 2013.

Happy Thanksgiving everyone! Hope you're home with friends and family, cozy and pleasantly full! I sure am. This Thanksgiving was low key as it was just me and my husband. My parents and brother went out of town so I didn't make a gargantuan amount of food as I usually do. We ate two plate of food and have been relaxing on the couch with a glass of wine and Twilight Zone marathon on the tv. I am now blogging from the comfort of my couch with a cup of holiday black tea nearby. The following is what we ate today.


First up, Tofurky Roast! I swear, every year it just tastes better and better. I roasted mine on top of carrots, turnips and onions with a delicious olive oil/soy sauce/orange juice/herb marinade.


Delicious herb stuffing from The Vegan Family cookbook. My husband complimented me on this and I was glad because he's used to boxed chicken flavored stuffing. Homemade is best!


First time for me making a sweet potato casserole. I got this recipe from Susan V. here. It's very good but so sweet. I'm not used to adding sugar and syrup to sweet potatoes, but I'm glad I tried it. I only used two sweet potatoes so I pretty much halved the recipe.


I gave these vegan Yorkshire puddings a go. I was very scared but I'm happy I tried. They didn't come out puffy and light like the traditional ones but these were quite nice. I would add less salt next time. I used Jeni's recipe here. I subbed almond milk instead of soy and all purpose instead of bread flour which could be why they didn't turn out how they should.

"Cheesy" Broccoli and Quinoa Casserole.

And here we have yet another casserole this week. I found the recipe here and gave it a go when I got home from work. Only thing different is I also sauteed some celery and carrots with the onions. I also added 1 tsp miso paste and 1 tsp veggie broth powder to the sauce. I cut my salt to 1 tsp because I figured the miso would make up for the other, but I probably should have kept the salt content as the recipe directed.

I would definitely make this again. It's creamy and very satisfying.

Another Casserole! (And A Salad too.)


This casserole making is getting out of hand! But since we are heading towards fall, don't you think comforting foods that bubble and bake away in a hot oven sound appealing? This "Chilaquiles Casserole" is based off of this recipe. I didn't use enchilada sauce, instead I used one can of tomato sauce mixed with one can of El Pato sauce. I also used Daiya pepper jack vegan cheese and added an extra can of beans to the filling. Mmm, mmm good. I love cheesy and saucy food. I'll have seconds, please!


This was my dinner last night. A giant bowl of salad with sauteed tofu and other good stuff. Tossed with sesame oil, lemon and soy sauce.

Not again!


YES! Again! I make this when I want something easy and super satisfying. This quinoa and black bean tortilla casserole dish never disappoints. I make it so much I should really start referring to it as "The Casserole". This time I added Daiya vegan cheese to create a nice melty top.

Quinoa and Black Bean Tortilla Casserole

Filling:
2 TB olive oil
1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 zucchini, chopped
1 tsp. cumin
1 tsp. chili powder
1 tsp oregano
1 14oz. can diced tomatoes, drained with juice reserved
1 14oz. can black beans, drained and rinsed
2 cups water
3/4 cups quinoa
salt and pepper to taste
1 cup Daiya cheese
Sauce: 2 - 8oz. can tomato sauce or you can use 2 cans of EL PATO sauce (yum!)
1/2 tsp. cumin
1/2 tsp. chipotle chili powder or plain chili powder
pinch of cayenne
1/3 cup Vegenaise
8 flour tortillas (to make it gluten free, use corn tortillas!)

Preheat oven to 350 degrees F. Heat olive oil in a medium sized pot and saute the veggies and garlic until they are soft. Stir in the cumin, taco seasoning and oregano and then add the drained tomatoes, black beans, water and quinoa. Bring to a boil and then lower heat to medium low and cover. Let simmer for 20 minutes or until quinoa is tender. Season with salt and pepper. Prepare sauce: Mix the cans of tomato sauce and the reserved tomato juice in a bowl. Season with 1/2 tsp cumin and 1/2 tsp. chipotle chili powder. Add a pinch of cayenne and stir until combined. Prepare drizzle by combining vegenaise and about a TB of the reserved tomato sauce. Cut tortillas into 4 wedges each. Spread a little bit of the red sauce in the bottom of a baking dish. Layer some tortillas wedges on bottom of dish. Spread with half the filling. Top with more tortillas. Pour half of sauce and sprinkle half of the Daiya cheese. Layer with more tortillas, spread rest of filling, top with more tortillas. Pour remaining sauce on top and the drizzle with vegenaise mixture. Top with other half of Daiya cheese. Bake covered for 30 minutes.

Saturday Comfort Cookin'.


Nice to get back in the kitchen on the weekend instead of going out to eat all the time. Today I wanted comfort food so I made my standby. It's my quinoa-black bean tortilla casserole, adapted from a stuffed pepper recipe from Vegetarian Times magazine. It has layers of flour tortillas, quinoa, black beans, veggies and spicy tomato sauce with a creamy vegan mayonnaise topping. I love this thing and could probably eat the whole pan by myself. Along with the casserole, I made sweet corn cake which is a recipe I got from The Tropical Vegan Kitchen cookbook.


All together now. After a few shots of Tapatio, I was ready to dig in.


I also made banana bread because of some overripe bananas I had lingering in my kitchen. Who doesn't like banana bread?


I took a break from guitar practice to have a cup o' tea and a slice. So good!

Lentil Tacos and Lentil Chilaquiles Casserole.


I made a really good lentil taco filling the other night to which I added chopped veggie sausage and textured vegetable protein. Came out delicious. Here's a good lentil taco recipe.

I had so much lentil filling leftover that I decided to make this chilaquiles casserole. I added scrambled tofu to the filling as well.
