Chickpea Almond Melt, Grocery Finds and LYFE Kitchen Review.



My fave chickpea salad made with chickpeas, ground almonds, celery, green pepper, red onion, vegan mayo, garlic powder, a bit of mustard and salt and pepper. It's truly delicious! I made a scrummy melt with whole grain bread and Daiya cheddar. It was so gooey and satisfying.


If you haven't tried this, do it TODAY!


Yummy accidentally vegan treats. The cashew brittle is to die for.


Asian pasta salad I made with quinoa pasta. I liked it at first but then the next day it sucked. Never buying quinoa pasta again. It fell apart and was hard yet overcooked at the same time.


LYFE Kitchen in Culver City. This was my first time. It has something for everyone: omnivores, veggies, vegan, gluten free. I got this corn chowder which was really good.


The caesar salad with Gardein chicken was good too.

Cupcakes, Creme de Menthe Parfait and Lunch.


Vanilla cupcakes with shop bought vanilla frosting and sprinkles. My sweet tooth is outta control this weekend.


Sweetness is my weakness.


I had to try this idea from Midcentury Menu blog. It's a creme de menthe parfait! Vanilla soy ice cream and a healthy drizzle of creme de menthe. I didn't have any whipped cream to top it off so I added extra cherries. If you like mint flavored ice cream, you will love this.


Lunch seems to always go this way on Sundays. My husband and I were eating while watching the Dodger game.

VeganMoFo: Oh alright...one more post for VeganMoFo!



Since today is the official last day of MoFo, I really should add another post. This weekend has been a weekend of eating out in L.A. and I thouht I'd share with you the yummy food I got to indulge in. Last night we went to a 50th Anniversary Twilight Zone screening at the Egyptian Theatre in Hollywood. It was a really enjoyable event that lasted 5 hours! Luckily we ate dinner before hand at California Vegan on Sunset.


Pad Thai dinner special. It comes with fried rice, salad, spring roll and miso soup (not pictured). Yummy yummy junky Thai food! Even though it's vegan folks, this is not the healthiest stuff around, haha! But it sure hit the spot.


For dessert: mango vanilla soy ice cream which tastes just very similar to the one from Trader Joe's. :)


Today we went to lunch at Bossa Nova Brazilian Restaurant on Sunset.


Xingu beer. Good.


Husband+Beer.


While the menu was very meat-centric, I was able to get this. Sundried tomato and arugula pizza, no cheese. So freaking delicious! If you ever get this, make sure to say no mozzarella, no parmesan!

VeganMoFo: The best dessert ever and more leftovers revamped.



I am so excited. I went to Thai Town today and shopped at a grocery store where they had freezers full of veggie ham, shrimp, salmon and beef chunks. All were very expensive so I had to pass. I knew that some of them probably had whey or eggs in them and I was too cold to search through it all because their freezers were ICY COLD. I was standing there with the freezer doors open literally shivering in my t-shirt while comtemplating on buying a ham tube. I moved on to the dessert freezer and found this:



Manna from heaven! I remember growing up eating this during my visits in Thailand and I somehow thought it had dairy in it. It is the most delicious ice cream (vegan ice cream!) that you will ever eat. If you don't like coconut or coconut milk, sorry! This totally made my day. Good thing I didn't buy the mock meats because this sucker cost me $15! Ingredients are: coconut milk, jack fruit, coconut, taro, sugar, salt. Five pounds of coconut heaven this.


I couldn't find or taste the taro in this. I think the green things are laht chong which is a dessert noodle flavored with pandan leaves.

Edit: I just found a recipe for this ice cream online here. So for those of you with ice cream makers, go nuts!

Do you remember my food the other day, the rice casserole and bean salad? Here they are revamped as a pita sandwich with lettuce and chunks of baked sweet potato and then drizzled with poppyseed dressing.
