Avo Toastie and Epic Salad!


Breakfast is very satisfying with a slice of buttered toast topped with avocado, grilled piquillo pepper, cherry tomatoes and sprinkled with Hawaiian smoke salt and pepper.

Behold The Epic salad I made for lunch!

Romaine topped with grilled zucchini, portobello mushroom, red onion, piquillo peppers, artichoke hearts, avocado and vinegared beets. Yuuuum.

Drizzled with two dressings: French and poppyseed/caramelized onion.

French Toast Breakfast and Cabbage Rolls


I finally made the Fronch Toast recipe from Vegan with a Vengeance and it was a so good. I ate all of that! I served it with some Tofurky maple tempeh bacon.

Before being drowned in maple syrup. Yum yum yum.

And for Sunday lunch my mom and I made the Syrian cabbage rolls from the Olive Trees and Honey cookbook. The insides were stuffed with rice, smashed chickpeas, onion and diced tomatoes and flavored with cilantro, garlic, mint and paprika.

I made a delicious side of dill potatoes with caramelized onions. This meal was amazing. And I have ton of leftovers!

More Food Photos!

Lots of yummy food I've been cooking. Bruschetta, salad, lots of lasagna and dal! And I'd like to say that TRADER JOE'S VEGAN MOZZARELLA IS THE BEST!











These are frozen basil cubes, with olive oil and with water. Looking forward to using them. I will either plop one into soup or into a hot pan for cooking!

Dinners this week: Salad and Meatloaf.


Made a quick salad the other night of arugula, grilled Portobello seasoned with garlic and soy sauce and tossed in a Dijon vinaigrette. I served it with a baked sweet potato. This was so good.

Last night I made a Magical Loaf out of chickpeas, mushrooms, celery, onion, green peppers, panko bread crumbs and oats. Slathered it with Manwich sloppy joe sauce instead of ketchup. Yum!

Tonight it's all about the meatloaf sandwich on squishy white bread slathered with vegan mayo, mustard and ketchup!

Salad & Steamed Cake!


Made a good salad today with hot sauce tofu, avocado, coconut bacon and vegan ranch!


Then my sweet tooth was begging me to make a cake but I didn't feel like baking. Browsed the internet for steamed cakes and found a recipe for steamed semolina pineapple cake and used apple sauce instead of pineapple. Came out great! I also added sultanas to mine.


I was so happy that it steamed beautifully in about 35-40 minutes.


Mine was steamed in a small pyrex glass bowl.


Served with Coco Whip. Mmmmm!!!!

Steamed Cake Recipe

1 cup semolina flour
1 cup coconut milk
1 cup applesauce
1/2 cup sugar
1/2 tsp baking soda
a couple handfuls of sultanas
Mix all ingredients and pour into a greased glass bowl or pan that fit into your steamer apparatus. Make sure you have enough water in the lower pot of your steamer so as to not have it dry out. I used a small pyrex bowl and steamed it inside a small pot with a steamer attachment. Steam for 35-40 minutes until toothpick inserted comes out clean. Some crumbs attached to it are ok. Let cool before turning out and cutting into.

Broccoli Sweet Potato Soup, Heidi Ho Cheeze.


Great soup recipe from The Happy Pear cookbook. I used Japanese yam and it was beautiful. Smooth and creamy.


If you don't have this cookbook, you must get it. I got it on Amazon for $20.


A new item to try. A basic cashew cheeze that is great on crackers.


But, I used it in salad and it was amazing! Also added coconut bacon (recipe from Salad Samurai) that made it even more amazing.

Tender Greens and some vegan snacks.


Went to Tender Greens today to celebrate our 3 day weekend. Haven't been here in years which is sad because their food is very good!


I got the lovely Roasted Tomato soup. I love the drizzle of basil oil.


This is the delicious HAPPY VEGAN salad which has green hummus, quinoa salad, tabbouleh and farro salad along with mixed greens.


Snacks are always nice. Vegan Sriracha popcorn from World Market.


VEGAN TOFFEES!!! YUM!

Dinner ruined! Plus backup dinner and chocolate pudding freezer pops.


So I got home from work today and spent a good amount of time making the above dinner. I revamped the coconut lentil dahl and made patties and roasted cauliflower. It would have been so good. Unfortunately when I took them out of the oven, I realized a light bulb in the oven had exploded and there was glass on the food. There were shards of glass mixed in with the cauliflower. I was horrified! Had to throw it all out! At least I got some pics. I will recreate this dinner again one day.

Smokehouse chickpeas from Salad Samurai. Easy to make when dinner gets ruined!


Backup dinner was this salad with smokehouse chickpeas with homemade thousand island (vegenaise, ketchup, pickle relish). It was very good.


The other day I made vegan chocolate pudding and decided I wanted them to be freezer pops instead. Super easy to do. Just pour them into plastic cups, stick a popsicle stick or in my case skewers with some foil to cover and freeze overnight.


Super tasty too!
