Chickpea Salad Melt


This takes me back to when I was living at my college dorm in the mid 90's. The decor was very dated as was the food in the dining halls. The starchy greasy food made me gain the Freshman 40. Awesome right? Well, one of those foods was the tuna melt. Toasty bread, mayonnaise-y tuna salad and melted cheese on top. I decided to re-create that dish today, vegan style.

The first thing I did was make the tuna salad equivalent. I made chickpea salad out of mashed chickpeas, chopped celery, red onion, vegan mayonnaise (Vegenaise brand), garlic powder, onion powder, a touch of mustard, salt and pepper. The proportions are up to you, taste as you go. If you want a "fishy" taste, you may add dulse or nori flakes. Next, I made the "cheese" sauce. The recipe I used is very similar to the "Cheese Sauce" recipe you'll find here. It's the 3rd recipe down. You don't have to make the whole amount, cut the recipe in half if you want. You can always store the rest in the fridge for later. Ok, so after that, I assembled the sandwich. I buttered a slice of whole grain bread with Earth Balance margarine, spooned some chickpea salad on top, dolloped a couple TB of cheese sauce and put it under the broiler for several minutes so the toast browned and the sauce got all bubbly.

Sandwich Sandwichy Sandwich...


I was in the mood for a sandwich today but realized I had nothing to put in one! So I flipped open 'Vegan Planet' and turned to my favorite faux tuna salad recipe. It's really good and easy to make with mashed chickpeas, almonds (I used cashews today), nori flakes, celery, scallion, vegan mayo, dijon mustard and sweet relish (my addition!). On toasted multigrain bread smeared with buttery Earth Balance margarine, fresh green leaf and juicy tomato, I was in sandwich heaven.

"Save-the-Tuna" Wrap + Yummy Date Cake

I made a batch of Ani Phyo's "Save-the-Tuna" paté yesterday to make these wraps for me and my husband for lunch. It's a sunflower seed paté that has chopped celery, onions and grated carrots. It's really delicious and I'm so pleased that my husband likes it. He says it reminds him of those little Starkist Tuna lunch mixes that comes in a can with crackers on the side. This paté goes very well with crackers by the way.


Along with the paté, I added collard greens, yellow bell peppers, onions (that were marinated in balsamic vinegar), carrots and cucumber.

I haven't had cake since christmas and I've been craving it like crazy. I haven't bought flour on purpose because I wanted to keep away from the temptation to bake. But today I was desperate and I had exactly 1 cup of flour left in my pantry, which was the perfect amount to make date cake! And luckily I bought a package of dates a few days ago so I was good to go. This cake is seriously moist and really sweet and just gorgeous.

Sunflower Seed Paté

I was inspired by "Smoothie's" post over at the PPK forums the other day to make this. Apparently she was up at 3 am eating sandwiches, one of which was sunflower paté on ryebread. It sounded so good so today I pulled out Ani's Raw Food Kitchen and found a recipe for "Save-the-Tuna Paté" which consisted of sunflower seeds, lemon juice, garlic, carrots, celery, onion and dulse flakes. I didn't want a fishy flavor so I left the dulse flakes out. I had some on ryebread with radish and later I will have some on top of salad. Mine came out more orange because I used too many carrots and a little sour because of too much lemon! I think my lemon was way too big. But it still tasted good and I will make it again in the future.


It came out very nice and creamy yet still with texture.

Edited to add: The recipe for this is online at the Happy Cow forums. It's here and is the second post. (You'll notice it says to use carrot pulp. I don't have a juicer (yet) so I just used 2 grated carrots.)

Whoa. Tuna Melt!



Well, not actually tuna of course. My lunch post got me thinking about sandwiches and I had to get back in the kitchen to make that mock tuna salad that was so good. After I made that, I went to put it in the fridge to chill for a while. That's when I saw the block of "Chedda Uncheese" that I made a few days ago. "Tuna Melt!" I thought. I'll eat my leftover chickpea burgers tomorrow. I wanted a "tuna" melt tonight.
WHOA! is all I can say. It was so damn tasty!

Another fishy idea: Mock Tuna Salad

Since my last post was about making faux fish, I thought I'd try a different faux fish recipe today. I didn't feel like cooking dinner tonight so I made the 'Tuna Free Sandwich Filling' from Robin Robertson's book Vegan Planet. It reminds me a lot of the mock "chicken" salad I make which basically consists of mashed chickpeas (garbanzo beans), celery, garlic and onion powder, mustard and mayo. This one though has almonds and kelp powder in it which is supposed to lend a fishy flavor. I did not have kelp powder so I substituted flaked seaweed (see note below) which worked very well. I also added sweet relish because it is what my mom always put in my tuna sandwiches (which was pretty much the only kind of fish I liked) as a kid. This makes a very delicious mock tuna salad and I don't miss eating real tuna at all.


First I tried it on crackers. Yum...


Then I made a sandwich with extra mayo and sliced cucumber. Double yum!

Note: To make flaked seaweed, take a nori sheet and pulverize it in the blender!
