What's For Dinner?








  1. Grilled salmon and Waldorf slaw.
  2. Chicken Minestrone.
  3. Spinach salad topped with shaved Parm, a tarragon chicken breast and warm bacon dressing.
  4. Air-fried chicken.
  5. Ham bone bean soup and skillet cornbread.
  6. Chicken and mushrooms in a garlicky mascapone sauce on rice.
  7. Bananas Foster French Toast.  I just kind of made this up, sauteing bananas in butter, brown sugar and a splash of rum. 
What's been on your dinner plate lately?

Also, thanks for all your get well wishes for Tiger.
He's shown some positive signs, like drinking on his own
from his water bowl, purring and looking a little more alert.
And most of all, scolding me when I force feed him broth or
cat milk with a syringe. haha.  But he still won't eat anything
on his own.  I'm not sure what his fate will be at this point.
I'm just going to try to give it my best shot and see where
we stand in a couple of days.  I'll admit to feeling this
overwhelming rise of anxiety in what might lie ahead for
the whole clan here.  But I need to put my energies 
toward this one for the next day or so before dealing
with all of that.

What's For Dinner?








Here's what I've been cooking up in the kitchen lately...

  1. Teriyaki glazed chicken with grilled pineapple.
  2. Chicken breasts stuffed with mozzarella and sun dried tomatoes.
  3. Spinach salad with chicken and shaved parmesan.
  4. Buttermilk blueberry pancakes.
  5. Creamy chicken and vegetable soup.
  6. BBQ Chicken sandwiches and slaw.
  7. Pork tenderloin with cranberry chutney.
What have you been cooking lately?
There's a meatloaf in the oven right now...the
smell is killing me!

Homemade Gluten Free Granola


I took my favorite homemade granola
and made it gluten free.
It turned out great, so I thought I'd share!

Gluten Free Granola

4 cups gluten free oats
1 cup chopped pecans
1 cup brown sugar
1 cup Rice Chex, lightly crushed
1 teaspoon cinnamon
1 teaspoon salt

Mix all the above in a large bowl.  Set aside.

1 cup apple juice concentrate, undiluted
1/2 cup honey
4 tablespoons coconut oil
1 tablespoon vanilla extract

Put above ingredients into a 2 cup glass measuring cup.
Heat in microwave 2 minutes until oil is melted and honey is soft.
Whisk together and pour over the granola mixture.
Stir well and spread in a large greased jelly roll pan.

Bake 350 for 1 hour, stirring every 15 minutes.

When cool, add 1 cup each of your favorite dried fruits.
I used pineapple, apricot, papaya, cherries and coconut.

Yum.

What's For Dinner?








Here's what we've been eating at our house lately...

  1. Baked salmon with lemon and thyme roasted brussel sprouts and red skinned potatoes.
  2. Apple pie pancakes.  I just sauteed sliced apples in butter and cinnamon and piled them on top of buttermilk pancakes and syrup.
  3. Pineapple and sriracha chicken thighs on rice.
  4. Spinach salad.
  5. A true 'clean out the fridge' soup made from a little leftover ground beef, rice, sliced mushrooms, onions, garlic and cream.
  6. Grilled Ahi tuna steaks and sauteed veggies.
  7. Grilled extra sharp white cheddar cheese and a bowl of roasted red pepper bisque.  The bisque was sold in a carton at the grocery and it was delish!  Just heat and eat.  We were remembering how we had lots of Campbell's tomato soup and grilled American cheese sandwiches when we were first married and dead broke.  This tasted a little better than that. haha.
Pull up a chair to the table...I'm still serving!

What's For Dinner

Here's what I've been creating in the kitchen lately....







  1. Saute Kielbasa, onions, and bell peppers, then add garlic and Half-and-Half and Parmesan to make a little sauce.  Toss in al dente pasta and spinach.  Taste and season.
  2. Rotisserie chicken, baked beans and green salad.
  3. Scrambled eggs, bacon, broiled tomatoes and a danish.
  4. Grilled Ahi tuna steaks, spinach salad.
  5. Quesadilla soup.  Make broth from a jar of salsa, chicken stock, Velveeta, chili powder and cumin.  Add cans of corn, carrots and black beans.  After spooning into bowls, top with sour cream, shredded cheese, avocado, tortilla chips. cilantro and Sriracha. 
  6. Homemade buttermilk pancakes and syrup.

Around Here Lately

The end of the week had me baking 8 dozen cookies!
I have to say this new kitchen made it an easy task.
96 cookies, rolled, cut out, baked, cooled and frosted in 4 hours!




Then the kitchen got put back together, the cookies got boxed up
and they waited to be picked up.  I hadn't had a cookie order in
a while, so that was very fun!






The rest of the weekend was lazy!
We ate buttermilk blueberry pancakes with
homemade syrup, thick sliced bacon and fried eggs.






We flopped on the couch.






We did a little bird watching outside.






Some of us did bird watching inside!





It's more up close and personal that way.
And the birds tease and sing like they know they
are safe in their cage. ha.
They don't even flinch when a paw tries to get through
or big yellow eyes peer at them upside down from the top.





We tried a new recipe, too.
Chicken breasts stuffed with sun dried tomatoes, pesto and feta.
omg...SO delicious!



The recipe was a keeper (I'll share soon)
and so were the weekend memories.
Now we're going to make a pizza and watch
the Super Bowl.  Well, I'm more interested in 
the commercials! ha.

Panettone




We love Panettone and I always pick up a couple of loaves
when it's available at Christmas.  Then after the holidays,
I buy up every loaf I can find when it goes on sale. ha.

We enjoyed some today with fruit and 
cheesy eggs with sausage served along side.
