Eating Sweet Corn



So, how do you eat your sweet corn?
Do you roll the ear away from you, making clean vertical rings?
Or do you bite it, moving it horizontally across your mouth like a
typewriter?  haha.  OR...are you so OCD that you can't stand the
pieces stuck in your teeth and you have to cut it off the cob?
Maybe your dentures make you do that, too. 
I guess I'm a typewriter style kind of girl.

Flavored Butters For Sweet Corn And The Easiest Way To Shuck Corn


I made up some yummy butters to spread on our
sweet corn for dinner last night.

Plain sweet butter ~ lightly salted.
Chili Cilantro ~ cumin, chili powder and cilantro
Lemon Dill ~ lemon infused olive oil, lemon juice and fresh dill.



I also tried a new-to-me way to shuck corn that I saw
on a video on facebook.  (thank you Lauren!)
1.  Microwave 4-5 ears with husks on for 10 minutes.
2.  Cut the ear on the closed end.  
3.  Hold the open tip (I used a dishtowel since they were hot)
 4.  Shake and the ear will fall out completely clean of the silks.
Amazing!  Where has this been my whole life?
All the silks are still inside....easy, no messy clean up, too.


One of the joys of summer just got a whole lot easier!

Mexican Street Corn


If you've never had this before, it really is worth a try....
especially if you like Mexican food.  It doesn't taste anything like
regular corn on the cob!  It is creamy, spicy, salty, sweet and
with the cilantro and lime, you really get that authentic taste of Mexico!


I've made this a couple of times now and think I've
worked out all the kinks and shortcuts.
Here's how I make it....

Mexican Street Corn

12 ears of fresh sweet corn

With scissors, cut off the brown silk tops and pull most of the
husks off until there is only a thin layer of husks covering the silk
and corn kernels.  

Microwave ears 4 at a time for 5 minutes, turning half way through.
Ears should be slightly under done.  The husks and silk should pull off easily leaving nice clean ears of corn.

Salt ears and grill to get nice char marks for flavor.  

While ears are grilling ~ tear 12 pieces of foil into 12" squares, one to
wrap each ear.  Prepare the seasonings....

1/3 c Mexican Mayonnaise
1/3 c Mexican Crema
1/4 t garlic powder
2 T lime juice

Whisk and set aside.

Crumble 1/2 c Cojita Cheese.  Set aside.

Chili Powder with shaker top.

Chop 1/2 c cilantro.

After ears are grilled, take an ear, lay it on a square of foil.  Brush one side liberally with creamy sauce, sprinkle with cheese, sprinkle with chili 
powder and cilantro. 

Turn ear over on the foil and repeat on the other side.  Wrap lightly and set on platter in warm oven (150F).

Repeat to remaining ears of corn.

Enjoy!



Some people leave the husks attached and only
remove the silks and then use the husks to wrap the
corn instead of using foil.

Don't skip that last step of wrapping the ears and letting
them warm.  It melts the ingredients into the corn
and combines the flavors!

I easily found all the Mexican ingredients at my grocery (Kroger)
in the ethnic food isle.

Random Thoughts


  1. Nugget is becoming an old man, with almost more grey hair than black!  He's still lively, though, hopping through the house and kicking up his hind legs!
  2. I worked an auction today.  We were out on a farm and the forecast last night saying thunderstorms actually turned to a gorgeous day.  A very lovely day to be outside!
  3. The thunderstorms came last night and we had a crack of thunder so big it knocked a little knickknack off the window frame in my studio, which hit a glass dome on my desk, that fell to the floor!  Thankfully, nothing broke!  It also raised us about a foot off our mattress.  haha. 
  4. Have you ever had Mexican Street Corn?  I made it for the first time tonight.  Like nothing I've ever had and very tasty.  We gobbled it up before I even thought to take a photo.  I guess that's a good excuse to make it again. :)  It was fun using new-to-me ingredients like Mexican Mayonnaise, Mexican crema, and cotija cheese.  I'll  share the recipe soon. Yum.

Sweet Corn Trip


I went to my favorite sweet corn farm this morning!
The drive is pleasant and the weather was perfect!
I came home with 4 dozen ears and shucked, cooked,
cut, and put it all in freezer bags.

What I Did Wednesday #36












We had sun, then rain, and then more sun!
I picked strawberries and made lemon sugar cookie bars.
I did dishes and laundry and ate sweet cherries.

I mixed up some cilantro-lime-cumin butter
for that sweet corn, and talked to Velvet on the porch swing.
She's the mother to nine of my cats but she won't let me pet her
and she has that look like she doesn't trust anyone.
I think she must have been abused before coming here.
She knows I won't hurt her and has let me touch her kittens
but I'm not allowed to pet her!  Little by little she is becoming
more relaxed and even lay on the foot of the bed the other
day while I sat there having coffee before getting up.

It seems that Slate is star struck over Grey!
Yesterday, they saw me on the front porch from a few houses 
down and came running home together like a 
scene from the movie Homeward Bound.
He just lights up when she's around and follows her everywhere!
Do you think it's her eyeliner or perhaps her white bikini? ha.

And Hilary, here's the other side of my tea cup that you wanted to see!

Taylor and Lauren will be here for dinner soon.
Need to shuck sweet corn!

The Sweet Corn Farm


I stopped at my favorite sweet corn farm today.
It was a perfect day to be out and about!
Low humidity, cool temps...30 degrees cooler than last week!


I got the Silver King variety.
Yeah, it's good enough for a royal name. :)
If you're local, this is Fairhaven Farm on Jasper Road in Xenia.
It's the best.  And it's a drive-thru.
Perfect.

How do you like your corn?
Butter and salt?
Sometimes I like to add flavored butters....fresh herbs,
spicy spices.....how about on the grill?
I'll take it any way it's served.

Gotta get some in the freezer, too.
It's become a yummy tradition to have summer corn
on the Thanksgiving table!

Sweet Corn


Our first of the season from our favorite little Fairhaven Farms
on Jasper Road in Xenia, Ohio.
The Best Sweet Corn ever.  Picked fresh daily,  $5 a baker's dozen,
immediately refrigerated... they even have a drive-thru.
If you're local, you have to go!

The sweetest part of this was that as i was filling a big pot with
water, it dawned on me that I don't cook it like that anymore!
Just 8 minutes in the microwave on a damp paper towel, 4 ears at
a time, rotating half way through.  Perfect, easy and no heat in the
kitchen.  Some of us ate it with butter and kosher salt right off the
cob.  Others preferred it cut off with butter, salt, a little chili powder, 
cumin, and fresh cilantro.  Heavenly.
