Potato Pancakes



Just stir in a beaten egg, some flour, garlic and onion
powders, salt and pepper and a little baking powder.
Place large spoonfuls in a skillet at medium high heat with
some oil and butter, press into pancake shapes and brown
well on both sides until dark and crispy.  Yum.

So, what do you do with leftover mashed potatoes?
I grew up on these and they always remind me of my
childhood when I make them.  Are they a Hoosier thing?
I have no idea, but they are yummy with ketchup, if
you really want to feel like a kid. :)

Warm Tri-Colored Potato Salad With Vinaigrette


I saw a bag of tri-colored potatoes at the grocery and thought
they would be fun to use.  Those purple ones are really beautiful
with their deep, rich color!  And you know, they really don't taste any different!


I've made this warm potato salad a few times this summer already and it's
such a nice change from the traditional mayo-based one.
And..you can make it right before dinner and don't have to worry about
chilling time or keeping it cold on a picnic.


Warm Tri-Colored Potato Salad with Vinaigrette

1 lb. small young potatoes
1/4 c olive oil
2 T lemon juice
1 T dijon mustard
1/4 c vidalia onion, very finely chopped
salt and pepper to taste
2 t sugar
1/4 t dill weed or 2 t fresh dill
6 strips crispy bacon, crumbled.

Cut potatoes into bite-sized pieces and boil in salted water until fork tender.  
Meanwhile, in medium sized bowl, whisk dressing ingredients together. 
 Fold in hot, drained potatoes and bacon.  Serve warm.
I used the precooked bacon and crisped it up in the microwave for 2 minutes.
Yum.
