
shortbread crust, tart lemon zest, sweet glaze
Betsy's Three Layer Lemon Bars
CRUST
1/2 c powdered sugar, 2 c flour, 2 sticks cold butter
Place in food processor and pulse until combined.
Press into greased 9x13. Bake 300 for 20 minutes.
FILLING
4 eggs, 4 T flour, 2 c sugar, zest from 2 lemons
4 T lemon juice, 1 t baking powder, 1/2 t lemon extract
Whisk together and pour over hot crust.
Bake 40-45 minutes until nicely brown and knife
comes out clean when tested in the center.
GLAZE
2/3 c powdered sugar, lemon juice
Whisk together. Should be thin enough to drizzle.
Spread over hot bars.
Cool completely before cutting.
